I may be from Ireland but I'm a Carolina Boy now. However, Carolina Blue is NOT my favorite color. I prefer RED and WHITE.
I'm originally from Ireland. I have been here in Raleigh since 1990. Raleigh has only gotten better since I've been here.
My favorite hobby is travelling. I've been lucky enough to have been to most all the states in the US and many places beyond.
More about me? I like to be outside, I like to be with my family and friends, I like a good time, and I like a good drink.

When your on the fence like me and don't like either choice, I think it is imperative to pay close attention. I want to write in on my ballot, but NC has chosen to invalidate my rights given to me by the Constitution by saying if I write in, my ballot becomes null and void. It is imperative to me to vote in the state election, so I don't want my ballot void. I'm in a catch 22.

Cook fettucini in salted water with olive oil until al dente.
You then saute minced onions in butter then add minced garlic and cook on med. low until soft. Add salt, fresh cracked pepper and cayenne to taste along with 1/4 cup of dry white wine. Add 2 cups of heavy cream (I sometimes use sour cream instead for extra tang) and 3 tablespoon FRESH lemon juice (I sometimes use more) and cook until reduced slightly.
Add fresh shrimp that has been peeled and deveined and cook in sauce until slightly pink. Add cooked fettucini to sauce along with 1/4 cup parmesan cheese and parsley if desired then cook until shrimp are completely pink. Then top with more parmesan.
