cheese grits

This is the time of year I start to plan holiday meals. The more I think of the food and what to buy, the more I find myself cooking more than I had planned.
I have found that grits are a seldom-used side dish on my agenda. I had not planned what I would fix for myself this evening until I was feeling a little bit hungry. Then I thought of grits with gravy. I didn't want to try gravy because I am so bad at it unless it's in a stew. I remembered that grits can be served as a compliment to shrimp, so why not steak. Come to think of it, grits-- cooked properly can be served breakfast, lunch and/or dinner. The meal I fixed for myself tonight is as follows:
Nice NY Strip steak, grilled.
Grits, added to boiling water (include a tad of olive oil, a tad of butter, maybe a tiny bit of sea salt, and a dash of pepper).
Cook slowly-- maybe 20 min. or so depending on the consistency. I like my grits on the thick side. So cooking times may vary. If you have cooked grits before, then cook the grits as you prefer.
Add a packet of cheese sauce. I use cheese sauce from unused/uncooked Mac & Cheese meals.
This is sooo good. I hope you will use your own imagination to try grits as an anytime side dish.

Sometimes I take short cuts, it depends. But, if I don't have something in mind to fix, the imagination gets t working. After raising three kids and now have grands, you have to know what to do. :)

Squeek, I use the mac noodles when I prepare chicken in a crock pot, seasoned to a tee. I add a cup of noodles the last 15 min. of cooking and a cup of water, if needed. All those seasonings mixed in with the noodles and chicken are "ooh so good."
