As I said in my first Blog about Peach Pie in a Jar on August 23...

I would play with the recipe a bit and see what works well. My Hubby likes it much better...more Peach taste this way. I have to agree with him. Though either way I would eat and enjoy *smiles*
12 Cups of peeled, pitted, and sliced Peaches
1 Teaspoon Cinnamon
1/2 Teaspoon Cloves
2 2/3 cups of sugar
1/2 cup of lemon juice
1/4 cup of vinegar
1/2 Teaspoon Nutmeg
Put all ingredients in a large pot...bring to a boil...reduce heat, cover, boil gently for 75 minutes stirring occasionally.
5 Pint size jars...ladle pie filling leaving about 1/2 inch head room.
Place in boiling bath water for 15 minutes.

Thank You Glow...Yes boil bath water is a big pot with boiling water...you put the jars in it to seal the lids so you may store them on a shelf.

I missed the first blog, but got to ask, why cook for 75 minutes?

It does make a great ice cream topping...other suggestions were pancakes or waffles.
