OK - Drive by post. It's Friday - busy at work but didn't want to not post anything!
Following up to yesterday's blog on fun side dishes, here are a few more.

(BTW - the image isn't really the recipe for the below stuffed tomatoes, but it sure looked good LOL!)
Parmesean Sage Potato Wedges
recipe ingredients
1 large (6 oz) potato, well scrubbed, cut into 1/4" wedges
2 cups cold water
1 tsp. oil
1 T. parmesean
1/8 tsp. each salt and sage
dash pepper
Directions:
Bring water and potatoes to a boil, until crisp tender (4 or 5 minutes). Rinse with cold water until cool. Pat dry. Heat oil in a nonstick pan. Saute potatoes until lightly browned. Sprinkle with cheese and seasonings.

Spinach Stuffed Tomatoes
recipe ingredients4 large firm ripe tomatoes
4 cups fresh spinach, washed and chopped,
or 1 10oz. pkg. frozen chopped spinach, thawed and squeezed dry
1 cup nonfat cottage cheese
1/4 cup parmesan cheese
1/2 cup dried bread crumbs
1 tsp. dried oregano
Directions:
Preheat oven to 425*F. Slice off the top 1/4 inch of each tomato. Scoop out the pulp with a spoon. Remove as many seeds from pulp as possible. Combine the seedless tomato pulp with remaining ingredients and stuff mixture into hollowed tomatoes. Place in a baking dish which has been sprayed with nonstick spray. Cover with foil and bake about 30 minutes, or until filling is set. Remove foil during last 5 minutes of baking to lightly brown tops.

Sweet Potato Kugel
recipe ingredients
Canola oil spray
1 lb. (about 2 medium) sweet potatoes
1 medium baking potato (about 1/2 lb.)
1 medium carrot, finely grated
1/2 cup golden raisins
2 large eggs
1/4 cup orange juice
1 Tbsp. canola oil or melted butter
1 tsp. ground cinnamon
1/4 tsp. freshly grated nutmeg
1 tsp. salt
Freshly ground black pepper
1/2 cup whole-wheat bread crumbs or matzo meal
Directions
Place rack in center of oven. Preheat oven to 350 degrees. Coat a 9-inch square baking pan with cooking spray.Peel and finely grate sweet potatoes into a large bowl. Peel and finely grate baking potato into a smaller bowl. A handful at a time, squeeze as much water as possible from the baking potato, then add to sweet potatoes. Add carrot and raisins and mix until well combined.In a small bowl, whisk together eggs, juice, oil, cinnamon, nutmeg, salt and pepper. Add to potatoes and mix to blend well. Add bread crumbs and mix until well combined. Turn mixture into prepared baking pan. With the back of a spoon, press firmly to compact it and then smooth the surface. Cover pan with foil.Bake 20 minutes. Remove foil. Continue baking until vegetables are tender and top is lightly browned, about 30 minutes. Cool on a rack until lukewarm.
Cut kugel into 8 rectangles and serve while still warm. To save for a later time, cover snugly with foil and refrigerate overnight. Before serving, reheat in a 350-degree oven until heated through, about 20 minutes.

But just remember - watch the quantity. Feta has LOTS of fat.
