chicken soup for lunch

Mmm... I just finished a bowl of the BEST chicken soup (in my opinion anyway)!
Two nights ago, I cooked a roaster in the oven. I filled the cavity with onions and fresh celery. I rubbed butter on the skin and lightly seasoned with salt and pepper. I placed it in a browning bag, with cut, red potatoes and baked until done. I prepared some rice (lipton's chicken rice) to go with the meal. It was scrumptious.
This morning, I took the bones of the same chicken, along with the broth that was made when it was baking and brought it to a boil in a pot w/added water. I pulled the remainder of the meat off the bones and let it simmer. I took some left-over rice and put it in the bowl with my soup mix (including the onions, celery and potatoes) and OH MY GOODNESS was it good!!!
This is my favorite way to eat chicken. Baked one day and then bones for soup the next. And on a cold day like today? Mmm mmm good!!
