indonesian shrimp dish
Published Jul. 2, 2008LOL Ok yeah - first off - the image IS NOT the dinner LOL I just wanted to look at shrimp - I love shrimp
Second, I don't know where my friend got this but she made it for me once, and I've been hooked ever since. This is what I'm making for tonights dinner.
I have no idea what it is called other than knowing it has some Indonesian background (per my friend). LOL So I called it "That Idonesian Shrimp Thing"
This is grilled and it really doesn't take much time to prepare or cook - so it's one of those QUICK fixes for me. Especially today when I really don't feel good. About 20 to 25 min total time I think.
Serves 4 people by the way (unless your my husband and then this feeds just him)
Ingredients:
6 TBSP smooth peanut butter (I use Simply Jif for the reduced fat)
1/3 cup (packed) dark brown sugar (I use Splenda here - yup Splenda has it)
1 tsp butter (I use Smart Balance Light)
3 TBSP seasoned rice vinegar
2 TBSP soy sauce (I use light sodium)
2 to 3 tsp hot chili paste (You can use 1 to keep it from being to spicey. Also you can find chili paste in any Asian market - Garner and Cary both have a good one and this stuff is SUPER handy to have around as a staple)
3 peaches or nectarines, cut each into approx 6 wedges (I peel mine by my friend does not)
16 uncoocked large shrimp, peeled and deveined.
6 heads of baby bok choy, halved (also can be found easily at any Asian market)
Directions:
Grill should be around medium-high heat. Whisk the first 5 ingredients together till smooth.
Arrange the peaches, shrimp and bok choy on the grill and brush with 1/4 cup of the sauce. Sprinkle some salt and pepper. Grill until peaches are slightly charred, the shrimp are just opague in the center and the bok choy halves are tender. The times will vary some. The peaches should only take around 2 min per side but the shrimp and bok choy take just a tad longer (in my experience). Maybe 3 or 4 min per side
To serve, drizzle a little sauce on the plate with the shrimp / peaches/ bok choy. Then pour the rest into a bowl to be used for extras if anyone wants it.
I had some zucchini and squash left over from last night, so that's my side tonight as well. I'm making some rice for the hubby and kid and I'll use some of the sauce to kick it up just a tad to blend with the dinner.
