This dinner for Tidbit and family tonight:
Makes 4 servings:
Ingredients:
6 TBSP extra virgin olive oil
5 TBSP chopped fresh cilantro
3 TBSP fresh lime juice
1.5 tsp grated lime peel
(4) 4 - 6 oz red snapper fillets
1 large mango, peeled and cut into thick wedges
3/4 tsp cumin seeds
Directions:
Prepare grill (medium heat). Whisk oil, 4 tbsp cilantro, lime juice and lime peel in a small bowl. Season with salt and pepper. Brush the fish and mango chunks (all sides) with some of the vinaigrette. Reserve remaining vinaigrette.
Sprinkle fish and mango with salt, pepper and cumin seeds. Grill the fish without turning until fish is opaque in center and mango is soft and beginning to brown (approx 6 min)
When serving the fish, drizzle with remaining vinaigrette and sprinkle with remaining fresh cilantro.
I'll be serving this with grilled zucchini and squash mix and baked whole wheat pita chips (take pita and cut into triangles - brush lightly with minced garlic and oil and bake at 350 for 5-8 min till crispy)
