yellow squash casserole

It's that time of year when the yellow squash is starting to come in strong. This is a delicious (I think) way to utilize those vegetables. I hope you enjoy it as much as I have over the years.
Squash Gratin with White Cheddar Cheese 1 medium-size onion, thinly sliced; 2 pounds yellow squash, thinly sliced; 1 teaspoon salt; freshly ground pepper; 2 eggs; 2 tablespoons sugar; ½ cup milk; ½ pound Vermont or New York white cheddar cheese, grated; 1-2 tablespoons butter.
- Preheat oven to 350 degrees.
- Cook the onion and squash in a small amount of boiling water for 10-15 minutes or until fork-tender. Drain well. Arrange in a 2-quart baking dish. Add salt and pepper.
- Mix eggs, sugar, milk, and cheese and pour over squash mixture. Dot with thin slices of butter.
- Bake at 350 degrees for 45 minutes. Cut into squares and then into diamonds to make a prettier shape on the plate.
6-8 portions
