chicken and lemon broccoli alfredo

Tried this tonight for dinner and HAD to share- It was delicious!
4 skinless, boneless chicken breasts
salt & ground pepper
8 ounces of mushrooms sliced
1 tbsp olive oil
1 lemon
3 cups fresh broccoli florets
1 10 ounce jar of alfredo sauce (refrigerated)
1/8 tsp pepper
1. season chicken with salt and pepper. In large skillet cook chicken and mushrooms in hot oil over medium heat for 4 minutes, turning chicken once
2. Meanwhile, shred 2 tsp lemon peel, set aside, slice lemon. Add broccoli and lemon slices to skillet. Cook, covered for 8 minutes or until chicken is no longer pink.
3. Place chicken and vegetables on plates. Add alfredo sauce, lemon peel and pepper to skillet (and drippings left from chicken and veggies) heat through. Serve sauce with chicken.
Makes 4 servings
231 calories, 11 g fat, 20 mg chol, 496 sodium, 6 fiber, 12g protein
This meal didn't need an added starch (noodles, rice, potato) it was great just like this. Let me know what you think if you try it!
