If money is tight and you're trying to entertain on a budget, do kabobs.  You'll  be surprised how far you can stretch it.

Tenderize tough meats: by marinading in a mixture of bouillon and vinegar (wine vinegar is good). 

Rub meat with oil and vinegar on both sides and let stand 2 hrs before cooking.

Before browing meats in a pan, sprinkle pan w/salt to prevent sticking.

Before broiling meat, place bread in the bottom of the pan to absorb the fat.  This prevents smoking. 

Roll link sausage in flour before cooking.  This prevents them from cracking open. 

If soup or stew is too salty, add slices of potato and let boil for several minutes.  The potato will absorb the salt. 

A leaf of lettuce dropped into a pot of boiling broth will absorb the grease from the top.

Soak wild game in milk to remove 'gamey' taste.

Clean fresh vegies in salt water to remove dirt better.

Cleaning copper-bottom pots: pour white vinegar on copper and then sprinkle table salt.  Rub gently.  This will restore the copper.

We like to do veggie kabobs with grilled chicken, using bell pepper, shrooms, onion, and marinated artichoke hearts... brush w/Italian dressing and sprinkle with garlic salt. YUM! Have not tried this, but I bet small cubes of potato would be good as well.

Pasta salad is good with kabobs. It's also easy and filling. I like the idea of the fresh veggies (yum). And maybe some cheese biscuits or rolls in case someone wants to make a 'sammich' outta their kabob.

2 or 3 different kabobs..or just the ingredients and let people make the kind they want...seafood, chicken, beef, onions, squash, tomatoes, bell pepper strips, mushrooms the ideas are endless.....

rice is good-it is also easy. Since it will just be the two of us to do everything, easy is real good. We'll be breaking in the new deck around the pool we put in last summer. We put it in ourselves and didn't get everything finished before we went back to school. I'm very excited, but there is a lot to do to get the place ready. We always make plenty of homemade ice cream and I finally have enough outlets outdoors to make it convenient. I hope to have squash and beans from my patio garden, but what other sides should I plan? There is always potato salad, and it is better made in advance.

Thanks for the tips about the copper pots! I have several RevereWare pans that I think I've had since I left home decades ago that I love, but are in great need of cleaning. I'll get to work on them.

If you like rosemary you can use the stems for the kabob skewers. They give excellent flavor to seafood, pork and chicken and they will not burn ( unless you cook with a blow torch)

Hadn't thought about kabobs. That's a great idea for 4th of July...my son and I are going to host our first 4th of July family party since my husband died. It will be 3 years the 7th. This is a big step for us. Even though everyone will come and have a great time, I'd like for it to be special. Kabobs might just be the start of a great menu. C'mon y'all, help me plan this thing.
