pumpkin waffles

This was Breakfast at my house this morning for Father's Day. I can't remember where I got it. It's from a magazine that I must have torn from, because it's taped to an index card in my kitchen LOL.
Pumpkin Waffles:
2 1/3 cup Reduced Fat Bisquick
1/2 cup canned pumpkin (NOT the pie filling)
1 1/2 cup milk (I use 1% or sometimes I substitute Low Fat Buttermilk)
1/4 cup canola oil
2 TBSP Splenda Brown Sugar (or regular) packed
1 TBSP pumpkin pie spice (or mix nutmeg, cinamon and ginger)
2 eggs
** chopped pecans are optional
Heat waffle iron and spray with Pam. Mix all ingredients (except pecans) till smooth. Bake till golden brown.
For some really good flavor - take about 1/2 cup real maple syrup (good thick kind) and heat in a sauce pan with 1/4 cup of frozen no sugar added apple juice concentrate.
It will get a little thinner, but once melted and heated up it is a FANTASTIC flavor over these pancakes with the sprinkled pecans.
