Tamale Pie
This is a recipe that my Great Aunt Mary use to make. I’ve made it since I learned to cook many moons ago…All of the measurements are approximates. LOL I learned to cook but not measure. :o) I will warn you that this doesn’t look great but it tastes great! Serve with a “blop” of sour cream and a sprinkle of green onions.
Brown about a pound or two of ground beef. Add one diced onion and cook until onion is soft add a little salt and pepper to your preference. Add two cans of El Patio hot sauce and a medium can of tomato sauce.(Add more or less heat ) Add one can of corn.(I like corn so I use 2)
You need a 13x 9 dish. Now that your “mixture” is bubbling take 1-2 dozen corn tortillas. One at a time add to mixture and cook for 30-60 seconds to get soft…start putting them into the dish to make a shell. Once you have the pan lined with tortillas, add a layer of mixture, sprinkle shredded cheese, another layer of tortillas(make sure you soften tortillas in mixture..you may need to add water), mixture, cheese…ending up with a cheese layer. Bake at 350 until cheese is bubbling on top.
You can add whatever you want to this…I sometime add black olives or green chilies.
