I'm a huge fan of Belgian Ales. I've recently become addicted to Saison or "Belgian Farmhouse ale". I am also a fan of IPA's and higher gavity stouts.

I know the recipe is accurate and is Pierre's; he gave it to me in Leuven in the 1990s. We were at a dinner in a town called Kessel-lo, and in walks Pierre Celis and Michael Jackson (The Beer Hunter). One of my Belgian friends knew Pierre, and proceeds to tell him I was a homebrewer, and next thing you know, Pierre and Michael were at our table drinking and telling stories. I asked Pierre where I could find his recipes (he's always supported artisinal hobbyists) and he wrote it on a piece of paper for me right then and there.

Pretty soon, however, we'll be camping and enjoying crispy cold Weihenstephan copies as they mature in the bottle.
