Oh yeah! Finally, the local strawberry crop is coming in. This is the perfect time for one of my most popular salads. Enjoy!
Smorg's Spinach, Strawberry, Mandarin Orange Salad
Ingredients:
12 ounces (approx) cleaned, trimmed, fresh baby spinach leaves (one bag)
1 pint thickly sliced fresh strawberries
1 small, thinly sliced red onion
1 can (11 oz.) mandarin orange slices, drained
Dressing:
2 Tbl Water
1 Tbl Balsamic Vinegar
1 Tbl Rice Wine Vinegar
4 tsp Honey
2 tsp Dijon Mustard
Salt & Pepper to taste
Tear spinach into bite-sized pieces and place in a large salad bowl. In another bowl, wisk together water, vinegars, honey, mustard, salt and pepper.
Add to the spinach, tossing lightly. Add onions and strawberries and toss once more.
Allow dressing to marinate with other ingredients for a few minutes before serving.
This salad is a beautiful 'presentation piece' in a bowl with the strawberries and oranges arranged in concentric circles on the spinach/onion mixture. Add some dressing to the spinach/onion first, then place the fruits on top. Mix with a bit more dressing just before serving.
Smorg's notes: You may also add as many or few of the following as you wish: slivered almonds; shredded coconut; shaved parmesian/regiano cheese.
If using the cheese, shave thin slices on top at serving time.

Sweet Cinnamon Salad Dressing
1/3 c olive oil
1/3 c balsamic vinegar
2 tbsp sugar
1/2 tsp salt
1/8 tsp ground ginger
1/8 tsp cayenne pepper
1/4 tsp pepper
1/2 tsp cinnamon

cooked vanilla pudding poured all over a bowl of Nilla wafers layered with fresh slices of strawberries. Let it cool enough so you don't burn your tongue. This important last step is even more important the next time you make it.
