** attn all vegetarians **

Just a little curious. Why did you decide to not eat meat?  For health reasons, I can not eat pork more than a couple of times a month. (But I would sure love to if I could) But I can not imagine having a GOOD meal without any kind of meat. Also, if you do not eat meat, do you eat eggs, or dairy products ?? Just a little curious to the reasoning behind this. Health reasons, I kinda understand, but why eles??

I agree with what Sue said as well...after looking into the soft brown eyes of the cows...I just could not go there anymore.

I became a vegetarian for many reasons, including animal cruelty in some farms, and health. I did have a hard time giving up bacon...and I still eat salmon occasionally, and I have not given up eggs or dairy. However, for cheese, I make sure it is the kind with non-animal rennet in it. So I am not a vegan, by any means, but I don't eat beef, pork, or chicken anymore...except for that stray piece of bacon about once every 8 months or so. (shhhhhh!) Before I became vegetarian, we raised our own cows/pigs/chickens because of the hormones and chemicals that are present in the general food consumables. Also had a garden, and used organics on them, as much as possible. It really is a way of life, and you evolve as you go along. And some go back to eating meat. But I don't think I will. I think it has made me a gentler, more understanding person.

Learning to eat less meat is often a matter of changing your cooking routine and learning new vegetarian recipes. Anyone have a non-meat cookbook that they would recommend?

When I was a teenager, I dabbled in the animal rights movement. Plus I developed a severe aversion to the aftertaste of red meat. I continued to eat chicken and fish. Then a few months later, I got a nasty case of food poisoning from a fish sandwich, so that, too, went out the window. I remain a vegetarian because I don't care to eat meat nowadays. Plus factory farms are horrifying. I eat eggs and dairy, and I prefer to get them locally.

I became vegetarian as a child to support my father in reversing his heart disease. I have remained vegetarian for over 20 years because I think factory farming conditions are inhumane. I love food SO much. There are many ways to create varied and flavorful vegetarian meals by cooking with a range of herbs, spices, fresh fruits and vegetables, beans, grains ... the list goes on. It takes some adjustment for people accustomed to making meat the centerpiece of their meal, to be sure. Try The New Moosewood Cookbook.

I was relating Con's relatively small chicken operation to the mass producers of chicken. I understand your point. When I said I haven't seen a lion take down a wildebeast personally, I meant in person. I watched hundreds of hours of Nature, National Geographic Explorer, and Nova programs growing up. My dad was a science teacher and we didn't have cable, but we did have 3 pbs stations.

I don't eat meat, eggs, or dairy. And no, I don't wear fur or leather either. For me it is about doing as little harm as possible. Anyone who's been around farm animals knows that they feel pain and fear just like our pets do.
