best pot of beans you ever had
Published Mar 25, 2008Views: 505
Here's one for ya eyeswideopen....
1 lb of northern beans, soaked over-night with enough water to cover beans, plus about 1-1/2 cups.
1 onion chopped
1 jalepeno chopped (two if like like to take it up a notch)
1 pound of thick-cut, smoked bacon
6 0unces of tomato paste
1/4 cup of dark brown sugar
1/4 cup of molasses
1/4 to 1/2 tsp of cayenne pepper
in a large dutch oven, cook the onion, jalepeno and bacon over medium heat for about 5-6 minutes.
Meanwhile, drain the beans...* reserving the liquid. Add enough vegetable broth to make 4 cups liquid total.
Add the rest of your indregients to the pot, stirring, and then add the beans.
Bring to a heavy simmer, cover, and move to a 250 degree oven for 5-6 hours.
More than enough time to make some cornbread!
