best pancakes ever!

Saturday morning at my house means one thing ... pancakes! A couple of years ago, I pimped up a recipe that my late father-in-law used, and now we think it's unparalleled. My boys prefer Aunt Jemimah syrup, while I use organic maple syrup. My husband likes canteloupe sliced on the side, while I like strawberries or blueberries spooned over the top. My son just likes them au natural, drizzled in syrup. We have great conversation, plan the weekend, and in general just enjoy each others company. Got any Saturday morning routines?
Here's the recipe:
- 1-1/4 cup flour
- 3 tsp baking powder
- 2 tbsp sugar
- 1/2 tsp salt
- 1 egg
- 1 cup milk
- 2 tbsp olive oil (or veggie oil)
- 1/4 tsp vanilla
- 1/8 tsp almond or orange extract
Whisk all ingredients until smooth, then cook on a heated griddle. Yum-ola!

Yogi Special -
This makes one omelet
2 eggs bell pepper diced- usually about 1/4 of a pepper works bacon crumbled or chopped virginia baked ham chopped onion colby-jack cheese if i'm in the mood i add fresh diced jalapeno pepper
saute onion and pepper in small amt of butter or spray oil for 2-3 minutes over med. heat
Whip 2 eggs in a bowl to incorporate plenty of air- this will help the eggs fluff a little
pour the eggs into a med-low round small round spray oiled pan(nonstick pan works the best.) as the eggs start to cook take a rubber spatula and lift the edges so the runny egg in the middle can run to the side and get cooked
3/4 way through usually about 2 minutes add the cheese onion/pepper mixture and meat of your choice- flip over to make the "omelet"
