RALEIGH, N.C. — Baking is one area of gluten-free living that is more challenging than any other aspect.

Because gluten is intrinsic to mainstream baking in America, it is one of the most difficult areas to master at home. Therefore, baked goods and convenience foods are among the most sought-after when buying or dining out. In fact, it is more likely for gluten-intolerant individuals to take the risk of buying single-sourced baked products than to sit down to a restaurant meal with many different components, though this is slowly changing.

Gluten-free bakers have developed a number of great products in the Triangle that are noteworthy. Some are dedicated gluten-free bakeries. Many are just starting out as small businesses, and others are long-term establishments that offer gluten-free options. These are primarily scratch bakeries. Once again, preference is given to those who utilize a dedicated gluten-free environment and set of procedures. This is so because gluten-based flours are pervasive, and it can be even more treacherous to prevent cross-contamination in a bakery than the average restaurant. However, it is possible to maintain gluten-free products that are safe in a mixed bakery. Safety is dependent on the measures and precautions taken, consistency of procedures, equipment used, and staff training. Information is not always readily available to the consumer seeking details, and this can create a barrier for those with intolerances. See websites and social media, or call them with questions.

Below is not an exhaustive list, but these are a few of our favorites and notable bakers in the area:

The Celiac Cakery: This is a gluten-free licensed home bakery in Raleigh that has a number of gluten-free products such as cakes, cookies, and doughnuts. They have been gluten-free for many years and teach classes. The Celiac Cakery can make adjustments to accommodate other sensitivities.
Joie de Vegan Bakery: This is a gluten-free bakery that is vegan and also accessible to low fructans and low-glycemic individuals. They began by developing allergen-free items for Sage Vegetarian Café in Chapel Hill. They endeavor to use organic ingredients whenever possible.
