Hans Lang knew his idea for fritters was unique.

Lang opened his business last August after seeing other food-slinging trucks make it on television shows – he specifically mentioned Pho Nomenal Dumplings, which won 2015's "The Great Food Truck Race" on The Food Network. But of all the food trucks he saw, none were making battered, deep-fried fritters.
"I figured, with all these people rolling out these food trucks, I'd roll out something completely different," Lang told the 919 Beer Podcast, "and I just decided fritters."

The Reuben fritter is Lang's take on the classic sandwich. The golf-ball-sized fritter is studded with bits of corned beef and served with a homemade horseradish, whole-grain honey mustard dipping sauce that adds a touch of spiciness to each bite.

There's also a Buffalo chicken fritter, served with a peppercorn buttermilk ranch sauce, and an eastern North Carolina barbecue pork fritter with a side of blueberry-chipotle barbecue sauce. The incorporation of well-known flavors in an mostly unrepresented form give Lang a different bite than other food trucks.

"I consider myself a little bit of a food scientist," Lang said of his creations. "I actually incorporate something into a fritter.

"That's what I just decided to do. It's taken off slowly, and people love it."
