The Lonesome Dove Bistro in Fort Worth is a big favorite with customers, who have been devastated by a fire that damaged the restaurant's kitchen earlier this week. Chef Tim Love estimates he'll be back in business in approximately a month, after Dallas renovators have had an opportunity to assess the damage, clear the kitchen, and initiate repairs. One especially important concern, giving the setting, will likely be the replacement of the tile, because when you're spending your time on your feet cooking, you want a solid floor that's also easy to keep clean.

Fire is a constant risk for commercial kitchens, thanks to all the heat and grease. Luckily firefighters were able to control the blaze at the Lonesome Dove before it spread into the rest of the restaurant, but the incident is a sobering reminder to keep sprinkler systems in excellent working order and to maintain fire safety protocols. Those include making sure fire extinguishers are in good condition and keeping paths clear for evacuation.
