Several Triangle restaurants have joined the Meatless Monday initiative, which encourages people to eat healthier and avoid meat once a week. To help support the international movement, more than 20 local restaurants are offering a meatless, vegan dish on Mondays.
Solas in Raleigh recently announced its participation in the initiative through its vegan/vegetarian menu, which includes sweet coconut curry vegetables, stuffed poblano peppers and vegetable lasagna. The menu is offered daily, but highlighted on Mondays.
