50-minute poached organic egg, uni, celeriac cream infused cauliflower puree, osetra caviar
Freshly chopped tiger prawns, truffles, exotic mushrooms, mascarpone cheese, steamed and served in shitake bonito broth
Freshly chopped filet of certified angus beef, kizami wasabi, chives, roasted garlic, flying fish caviar, shaved foie gras
Filet of certified angus beef cooked sous vide style to medium rare then seared to crusty outside served with roasted garlic, beet root infused wasabi mashed potato, shiso chimichurri
Flourless chocolate tort served with green tea ice cream and raspberry jelly
The ticket for this event includes the wine pairing, tax and gratuity. The high-end items included on the December menu puts the value of this meal at more than $150 per person. (The caviar and truffles alone are ingredients that are valued at more than $100 per ounce.)
