    We will be celebrating (eating Easter dinner) on Monday since Rae and I will be at church mostly all day on Sunday (church is in Durham which is a journey from Raleigh so we usually stay in Durham all day) and hubby works night shift so we will be eating Ham, deviled eggs, choice of cheesy potato casserole or sweet potatoes (both on sale at ALDI), green beans, cabbage, and a cheese cake for dessert on Monday night.

    Tonight, DW is having leftovers and I might have an artichoke with mayo for dipping. We have good desserts, though. Blueberry pie for her and pecan pie with whipped cream for me.

    Easter is not a holiday we observe, so nothing special planned. I'm just hoping for nice weather so we can cook out on the grill.

    OK... finally have my Easter menu! It's just the 2 of us so going easy-

    -Ham (hopefully I will be able to get a honeybaked tomorrow- yes, I waited until the day before last year too- lol!) but at least I got a mailed coupon.
    -Asperges à la Flamande (which is asparagus with hard boiled eggs and a parsley, butter sauce)
    -Duchess Potatoes with Fresh Dill and Gruyere
    -Pan de Sal (sweet Filipino yeast bread rolls) from the Jan/Feb Saveur issue that looked AMAZING!

    I'm going super-simple tonight as this will be a busy weekend! Zatarain's reduced sodium Jambalaya Mix with seared Italian veggie sausage ("fausage") and fire roasted tomatoes.

    I drain an 8 oz can of garlic/onion fire roasted tomatoes and use the liquid as part of the liquid called for in the directions. I cut 2 Tofurkey Italian Sausages on the bias and pan sear them, then add to the prepared Zatarain's along with the drained tomatoes. It's really good topped with a little cheese or a dollop of sour cream - two things that by the end of the week I need to use up anyway!

    One time I bought some really fresh okra and almost forgot about it - I cut it into disks and threw it in while the Zatarain's was cooking... at that point people thought I made the whole thing from scratch!

    All y'alls Easter dishes sound delicious... I may have to adjust my planned menu a little bit now...

    Tonight we're having bow tie pasta with spinach and chicken in a cheese sauce (DH needs to stay away from spicy things and tomatoes for awhile). I'll serve this with a green salad and garlic bread. Tomorrow night is grilled cheese sandwiches with matzo ball soup (again, gotta stay away from my tomato soup which is a standard with grilled cheese). Then on Easter we're having ham, sweet potato casserole, green beans amandine, and deviled eggs.

    That sounds like a lovely Easter gathering! You don't have to do all the work and you get to enjoy your family. Perfect combination! I hoep you have a wonderful time. :-)

    RFB - that's funny about your DH and the meatless meal. We still have a little beef leftover from the stew so I will serve that as well for those wanting meat with their many carb and veggie choices. :-)

    Easter - I have it easy! All I have to make are handmade rolls - we're all gathering at my sisters, (I have two siblings locally) and we all contribute to the meal, that's all they wanted me to bring! We're getting a honeybaked ham, baked potatoes au gratin, deviled eggs, salads and lots of laughs and making memories :)
    I so look forward to our monthly gatherings (we rotate houses each month). It's a new tradition we started in January and it's great fun!

    That's funny... we're going veggie tonight too (although my DH did roll his eyes a bit, when I told him :-) I have some tortellini and I'm going to add a ton of veggies and a picatta sauce, but made with vegetable broth.
