What would your ultimate food truck serve?

Out and About loves food trucks and after attending several food truck rodeos recently, we started talking about what would be on our ultimate food truck.
What would that menu include?
American Meltdown's Scar-Breakfast sandwich (bacon, aged Gouda and a sunny side up egg)
KoKyu BBQ's Duke Fat Tots
Baguettaboutit's New Jersey Turnpike (Sweet Italian Sausage and Roasted Red Pepper Sauce)
Barone Meatball Company's Mom's Italian Meatballs
Chirba Chirba's Juicy Buns (pork filled dumplings)
Deli-icious' crab quesadillas
The Humble Pig's Pork Tacos topped with their Kickin' Butt sauce
Mama Duke's Falafel Tots
Only Burger's burgers!
Porchetta's Mediterranean sandwich (Their tender slow roasted pork topped with roasted red peppers, caramelized onions, mozzarella and herb aioli)
Sarge's shrimp and grits
Blue Sky Dining's beer battered grilled cheese
Valentino's pork stuffed jalapeno poppers
For dessert:
Parlez-Vous Crepe's Fluffernutter - (Their take on this treat filled with peanut butter, chocolate and marshmallow)
