Easy Tomato Soup
This is a new one that will make an appearance in their lunch boxes, along with cheese, crackers, fruit and veggies. I found it on Food Network's website. It's so easy, you can make it in the morning. Just blend together a 28 ounce can of whole tomatoes with the juice; 1 roughly chopped celery rib and 1 cup low-sodium chicken broth. Then, pour in 1 to 2 teaspoons of fresh lemon juice and 1 tablespoon of pure maple syrup (or the same amount of agave nectar, which is what I had on hand). Then stir in 1/4 to 1/3 cup cream. Heat in the microwave so it's warm enough to fill in a thermos. That's it! It makes for a wonderful, quick lunch or dinner too.
