Avocado Toast: My new favorite recipe

Avocado Toast with Portabello Mushrooms, Parmesan & Egg

While looking at recipe sites yesterday, I came upon a video for 9 ways to make Avocado Toast and my mouth was watering.

So guess what I had for lunch today?

You got it - Avocado Toast!

I used a variation on the egg recipe from the video and revised it to include sauteed portobello mushrooms and parmesan. It was DELICIOUS!!

Below is the recipe I used. I would be happy eating this every day for lunch for a very long time.


1 piece 100% whole wheat bread

1/2 ripe avocado fork mashed with a dash of salt & pepper

1/2 Sauteed, sliced portabello mushroom cap (sauteed in olive oil spray)

1 Over medium egg (cooked on both sides with no runny white, only slightly runny yolk)

Sprinkle of Parmesan cheese

5 Grape tomatoes, cut in half


Spread the mashed and seasoned avocado generously on a piece of 100% whole wheat bread. Layer the sauteed portabello mushroom slices and then the cooked egg on top of the toast and avocado. Finally, sprinkle parmesan cheese on top of it all and garnish with grape tomatoes. Season with pepper to taste.

If you want some kind of sauce on top, you can use a balsamic vinaigrette or Sriracha (as shown in the video).

And really, the variations on avocado toast are endless. I plan to discover new ones on a regular basis.

    The chicken & egg salad recipes sound delicious. I love avocado. Faye, your avocado toast sounds delicious too!

    thrift - I bet that does taste delicious! I'm going to try that as well. Maybe with a few dried cranberries, also.

    Avocado in chicken salad is also yummy (instead of mayo) especially if you add almonds, grapes or apples, celery, and a little onion:) Sometimes a few mandarin oranges sneak in there too.

    I make egg salad with eggs, salt, pepper and a mashed avocado. No need to add any mayo as the avocado makes it really creamy.
