Perfection is Fayetteville restaurant's standard for cleanliness

Restaurant owners often say it's tough to get a good grade from health inspectors, but Myong's Grill and Buffet in Fayetteville has getting and keeping a perfect score for cleanliness down to a science.

FAYETTEVILLE, N.C. — Restaurant owners often say it's tough to get a good grade from health inspectors, but a Fayetteville restaurant has getting and keeping a perfect score for cleanliness down to a science.

Myong's Grill and Buffet on South Reilly Road has been open for four years. It's gotten grades for 14 restaurant inspections. Twelve times, it scored a perfect 100.

"We try our best," Myong's co-owner Joseph Sulitch said.

Joseph Sulitch said part of his restaurant's success is knowing what inspectors want to see.

"They look at what we have in my station, in the refrigerator. Everything we cut up, it goes in Ziploc bag. So, therefore, you can never be gigged for having something uncovered," he said. "My wife is the queen of Ziploc bags."

He said that whenever an inspector recommends a change, he does it immediately. The layout of the dining room is also changed periodically, so nothing can accumulate under the buffet or elsewhere.

Joseph Sulitch said his goal is to keep the whole restaurant clean.

"We have a simple rule. If you spill something, clean it up," his wife and co-owner, Myong Sulitch, said. "You just need to do the cleaning. Every time, whatever you use here, clean."

The oven hoods are cleaned every Thursday and Saturday. During nightly cleanings, workers have the same tasks, so they know exactly what needs to be done.

"We don't leave until it's done," Myong Sulitch said. "That's all we do. We keep cleaning."

The couple said the kitchen door is always open because they want customers to see how clean it is. Customers said they appreciate the effort.

"A doctor could work in there. That's how clean it is," customer Jamie Graves said.

Myong Sulitch said she always strive for perfection, although the restaurant has scored a 98.5 twice.

"Not acceptable. We just set our standards higher than that," she said.
