Monday meal plan 7/25

On the menu this week we have tilapia, stir fry tofu and veggies, fat free Ball Park beef franks, salmon burgers and more!  What's on your menu?


Monday – I am working late so hubby is in charge of dinner tonight

Grilled Fat Free Ball Park beef franks (BOGO with coupon a couple weeks ago)

Ball Park Buns (.40 with sale and coupon at Lowes Foods a couple weeks ago – I store them in the freezer until the day before needed and take them out to thaw)

Macaroni salad

Salad (leftover from our salad bar dinner from Sunday night – my 9 year old requested a salad bar for dinner! Don’t you love that?! The salad bar pictures are above.)


Salmon burgers (cooked on the skillet) on whole wheat buns with tomato slices, fresh spinach leaves, onion slices, and light mayo (salmon burgers BOGO at Lowes Foods through 7/26 for $3.35/box with 4 burgers)

Long grain and wild rice

Steamed broccoli with a touch of Parmesan


Stir fry tofu and veggies


Egg rolls


I am working late again so husband is making dinner

Spaghetti and marinara sauce

Garlic bread



Not sure yet – maybe breakfast for dinner


Going to friends’ house for dinner to celebrate his birthday! We are grilling something but not yet sure what.


Baked tilapia fillets (Beacon Light brand BOGO at Lowes Foods a couple months ago)

Brown rice

Sauteed squash, zucchini, mushrooms and onions (squash and zucchini on sale at Kroger through 7/30 for .99/lb and will probably be on sale at other grocers starting on Wednesday, 7/27)

    Fancy grilled cheese was a total bust! I would just suggest adding spinach to your normal grilled cheese instead of using this recipe. These sandwiches were dripping with oil and I only used half the butter it called for. Their was no way Giada ate one of these and stayed her tiny self...she must either have the metabolism of an Olympic Athlete or stay chained to her treadmill! LOL

    I love Giada but I probably wouldn't buy the pancetta either. Maybe I'll throw in some veggie bacon.

    The grilled cheese recipe calls for Monterrey jack and cheddar cheeses. I saw this recipe on Giada's Everyday Italian show and I just had to try it. However, I had a difficult time finding panchetta at the deli...when I did find it, it is $13.99lb!!!! So, I bought 1/4lb for $3.50. I am definitely going over my usual protein cost for this meal. I will post a link if it is a hit on Tuesday.

    Mon - Lemon Chicken in crockpot, brown rice, watermelon

    Tues - Sub sandwhich bar; slice up veggies from the garden, pickles, cheese, sandwhich meat; Lays chips from B2G3; cantalope from our garden

    Wed - Picante pork chops (this is a skillet meal from a flyer years ago has rice, kidney beans, and corn too); salad (Lowes); watermelon or melon

    Thurs - leftovers; this is cirriculum night at school

    Friday - Pizza and Salad

    Sat - Celebrating our anniversary using a Gift card and coupon for Outback

    Our meals this week:
    Sunday-Turkey Burgers, mushroom wild rice, and broccoli.

    Monday-Marked down steak, mash. potatoes, and green beans.

    Tuesday-Fancy grilled cheese with spinach and panchetta from the Food Network, sweet potato fries.

    Wednesday-Hamburger helper, broccoli.

    Thursday-Frozen pizza and tossed salad.

    Friday-Hubby is cooking??? or maybe we are going out?

    Saturday-Grilled chicken and corn, maybe pasta or potato salad.
