Monday meal plan 7/11

It's the start of a new week and it's time to make your new menu. What will you be serving this week?

My menu is short and sweet this week. I am heading to my 25th high school reunion so my cooking "skills"  will not be in action for much of the week!  Whoooo hooo! Oh, I'm sorry, was I a little too excited about that?!

Monday

Pasta with marinara sauce and parmesan cheese (free whole grain Mueller's pasta from last super doubles at HT and sauce on sale for $1 a few weeks ago with sale and coupon, store brand parmesan on sale for $2.50 at Lowes Foods last week)

Creamed spinach (Green Giant $1.28 for the box at Walmart - I love this creamed spinach!)

Cantaloupe (because the kids hate creamed spinach! It's on sale through 7/12 at Food Lion for only 99 cents. We had one the other day and it was very tasty)

Tuesday

Breakfast for dinner!

Cheesy scrambled eggs

Whole wheat toast (whole eheat bread .69 per loaf at HT with e-Vic special I received on Friday)

Veggie Morningstar sausage (using the $1 printable coupons you all sent to me! Thank you!!)

Cantaloupe (on sale through 7/12 at Food Lion for only 99 cents!)

Wednesday through Sunday

Hanging with my buddies at the reunion wondering how it is possible that 25 years have gone by since we graduated!

    Thanks, pirategirl and pss3! Well, I still have a little ways to go but I am certainly in better shape than when the year started. I take it a day at a time - that's all I can do.

    pss3 - sorry about the unexpected repair bill. You put together a great menu regardless of being frugal.

    Have a great time at your reunion Faye! You've worked really hard and deserve a great time!!!!

    Over here...we will be having a very frugal week as we had an unexpected repair bill...that's life:(

    Sunday-Whole wheat hamburger helper with green beans.

    Monday-Grilled chicken breasts (from the $1.77lb sale at FL a few weeks ago), mashed potatoes (free from HT SD's a few months back), and some sauteed zucchini (.99 a pound).

    Tuesday-Turkey burgers with oven roasted baby potatoes.

    Wednesday-Pasta with light alfredo sauce and veggies, garlic toast.

    Thursday-Soft taco night with rice.

    Friday-Chicken nuggets, mac and cheese.

    j3434 we too will be eating from our small garden harvest. Tomato sandwiches ( 69 cent wheat bread from HT) with fresh cucumber and steamed squash/zucchini. Then I will fix a shrimp ( buy 2 get 3 from HT) cacciatore made with our tomatoes, bell peppers, onions, squash, zucchini and my fresh herbs. Love my garden! I just wish I could figure out a way to grow my lettuce when the other veggies are coming in!

    we're crankin' up the A/C one night and having chili! hubby can't wait to try out some of his homegrown peppers and tomatoes in full effect. i told him to make a BIG OLE BATCH so i could go ahead and freeze single servings. they're great for winter or chilly fall lunches at work.
