Monday meal plan 6/27

On the menu this week we have spinach quesadillas, teriyaki tofu, turkey sausages, veggie burgers, whole wheat pasta and more. It’s almost a meat free menu – we just haven’t been big red meat eaters lately.

What’s on your menu?

Spinach and cheese quesadillas

Spanish rice

Mixed veggies (Steamfresh frozen veggies on sale with coupon a couple weeks ago)

Teriyaki tofu (cubed and cooked in skillet on high with KC Masterpiece Honey Teriyaki sauce) – bought for 19 cents a package (usually $2.19 each at HT) with $1 printable coupon that Nasoya e-mailed to me and super doubles at Harris Teeter. We use 2 packages of tofu for dinner so our high quality, lean protein for the meal is less than 50 cents for the whole family!

Stir-fry veggies (Zucchini, mushrooms, onions, green peppers)

Brown rice (Free at HT super doubles with sale and coupon)

Kahiki egg rolls (bought at last HT super doubles for a great deal)

Out to dinner with friends!

I am working late so hubby is in charge of sandwich night – I’m thinking veggie burgers since I will be buying some at Target this week thanks to all of you! :-)

Pasta Salad

Fruit – depends on what is on sale starting Wednesday

Not sure yet – we may be at the skating rink enjoying the gourmet offerings included in the cost of the skate pass (I’ll be brown bagging it, of course)

Grilled Butterball turkey sausages bought a couple months ago (on sale w/coupon of course)

Ball Park hot dog buns bought at Lowes Foods last week on sale with .55/1 coupon

Corn (5 ears for $1 at Target through 7/2)

Grilled veggie packets with Italian dressing

Fruit – depends on what is on sale starting Wednesday

Whole wheat spaghetti and pasta sauce (Muellers whole wheat pasta free through 6/28 at HT with $1 sale and $1 printable coupon on Muellers website when you sign up). I also add about ½ a container of the plain Philly Cooking Cream to the pasta sauce and it makes it wonderfully creamy.
