Monday meal plan 6/27

On the menu this week we have spinach quesadillas, teriyaki tofu, turkey sausages, veggie burgers, whole wheat pasta and more. It’s almost a meat free menu – we just haven’t been big red meat eaters lately.

What’s on your menu?


Spinach and cheese quesadillas

Spanish rice

Mixed veggies (Steamfresh frozen veggies on sale with coupon a couple weeks ago)


Teriyaki tofu (cubed and cooked in skillet on high with KC Masterpiece Honey Teriyaki sauce) – bought for 19 cents a package (usually $2.19 each at HT) with $1 printable coupon that Nasoya e-mailed to me and super doubles at Harris Teeter. We use 2 packages of tofu for dinner so our high quality, lean protein for the meal is less than 50 cents for the whole family!

Stir-fry veggies (Zucchini, mushrooms, onions, green peppers)

Brown rice (Free at HT super doubles with sale and coupon)

Kahiki egg rolls (bought at last HT super doubles for a great deal)


Out to dinner with friends!


I am working late so hubby is in charge of sandwich night – I’m thinking veggie burgers since I will be buying some at Target this week thanks to all of you! :-)

Ball Park hamburger buns bought at Lowes Foods last week on sale with .55/1 coupon

Kraft Big Cheese slices for the veggie burgers - $1 coupon at HT super doubles through 6/28

Pasta Salad

Fruit – depends on what is on sale starting Wednesday


Not sure yet – we may be at the skating rink enjoying the gourmet offerings included in the cost of the skate pass (I’ll be brown bagging it, of course)


Grilled Butterball turkey sausages bought a couple months ago (on sale w/coupon of course)

Ball Park hot dog buns bought at Lowes Foods last week on sale with .55/1 coupon

Corn (5 ears for $1 at Target through 7/2)

Grilled veggie packets with Italian dressing

Fruit – depends on what is on sale starting Wednesday


Whole wheat spaghetti and pasta sauce (Muellers whole wheat pasta free through 6/28 at HT with $1 sale and $1 printable coupon on Muellers website when you sign up). I also add about ½ a container of the plain Philly Cooking Cream to the pasta sauce and it makes it wonderfully creamy.

    No meal plan, as usual, here, though my husband has registered a request for homemade ravioli. Looks like I'm in the market for a pasta machine. The rest of the "stuff" people use to make it isn't wholly necessary if you're patient and like working with your hands (that'd be me). Hand rolling the dough requires more skill than I have, and having it stick to the board and tear kind of defeats the purpose. It's been ages since I made ravioli. Dead cheap to make yourself, and you can play with the fillings.

    I love creamy crockpot dishes over egg noodles, too, amgnc. We also love breakfast for dinner, bjones.

    Great,cheap and easy. I made it for the 1st time 2 night and it was really good

    2 cups water
    2 can cream of mushroom soup
    1 package turkey gravy
    1 package frozen meatballs (2 pound bag)
    Salt and Pepper

    Place everything in the crock pot cook on low for 3-4 hrs
    Serve over wide egg noodles or mashed potatoes.

    Sunday-Oven baked chicken tenders over stuffing, sweet potatoes.

    Monday-Wholesome hamburger helper, broccoli.

    Tuesday-White wine chicken with homemade mac and cheese, salad.

    Wednesday-Pasta with Philly cooking creme sauce and Italian turkey sausage, salad.

    Thursday-Turkey burgers and fixins, oven roasted potatoes, broccoli.

    Well we are having breakfast two nights this week because of eggs from HT! One night with sausage and grits and the other making cheese omlettes with fruit. Tonight is meatloaf with ground beef on sale from HT along wth Bob evans potato's and corn on the cob. Not sure about the rest of the week probably taco bar one night too. My kids love that.

    Mon-left over lasagna from husbands birthday, grilled zuchinni and eggplant from our garden, watermelon
    Tues - Birds eye viola meal, probably more watermelon
    Weds - Chicken of some type in crockpot

    Not really sure what the rest of the week will bring but I have plenty in the freezer to pull from.

    OMG! knowles that sounds delicious! My dad's garden is putting off right now and he gave me a mess of fresh squash, cukes and tomatoes so I might make your sandwich! It's also lower in carbs since it's an open face sandwich.

    I love tomato sandwiches during the summer! Have never put cucumbers on them though! That sounds a little messy, but to each their own! Another summer favorite in my family is to take 1 piece of bread, top it with cheddar cheese (has to be the block kind, not the sliced sandwich cheese), then tomatoes and bacon then bake til the bacon is done. We partially cook our bacon first and turkey bacon works well too! Delish!

    Wow - you and your clothes are going to be very very clean, tldavids! During the summer, I am just as happy to have cold salads and sandwiches every day. Make them 'mater and cuke sandwiches and I am good to go. :-)

    sandwiches and soup all week since I've spent all grocery monies on detergents and shampoo and body wash. Did eat my free brueggers bagel with cream cheese this morning for breakfast. 8-}
