On the menu this week we have salmon burgers, light shrimp alfredo, grilled chicken, veggie burgers, chicken quesadillas and dinner out with my hubby for our 16th wedding anniversary!
What's on your frugal menu this week?
Tomato and cucumber salad
Light Shrimp Alfredo (using BOGO frozen shrimp from Food Lion and free Kraft Philly cooking cream)
Pasta salad with veggies
Fruit (probably orange slices)
Grilled chicken (batch cooking a 3 lb bag of chicken and will be using leftovers in the chicken dish Friday night)
Leftover pasta salad with veggies
Chicken quesadillas (using leftover grilled chicken from night before)
I had thought about making enchiladas but that involves using the oven, which I try not to do very much when it is 90 degrees or more outside. It just heats up the house too much. So - quesadillas are made using the stove, which doesn't heat things up quite as much.
Out to dinner at a steakhouse with my husband to celebrate our 16th wedding anniversary! (And we are using a Groupon!)
Not sure yet - waiting to see what is on sale starting Wednesday
