A huge thank you goes out to Lowes Foods for sponsoring the "Let's Bake a Deal" Meal Planning session at the WRAL Wellness Weekend on Saturday! Everyone LOVED the baked spinach ravioli dish I prepared using products donated from Lowes Foods!
In case you didn't already know, Lowes Foods offers a great little meal planning widget on their website. Go to LowesFoods.com and click on the Meal Planning link on the right side of the page. You can choose from a ton of recipes including diet recipes with nutritional information included. You can also print the recipes and make a grocery list.
Here is the recipe for the ravioli (which is also on my meal plan for this week per my daughter's request!):
Baked Spinach and Cheese Ravioli
Ingredients
1 bag frozen light cheese, spinach and cheese, meat or cheese ravioli, approx. 24 oz
1 jar pasta sauce, approx. 26 oz
4 oz. shredded 2% mozzarella cheese or Italian cheese mix
2 oz. grated Parmesan cheese
Garlic powder and Italian spices to taste
Optional: 4 oz sliced mushrooms, ½ diced onion, 1 diced green pepper and/or 1 cup fresh spinach.
Preheat oven to 350 degrees. Spoon 1/3 jar over bottom of 13 X 9 pan. Place frozen ravioli on bottom of pan evenly. If you have a couple extra ravioli once bottom is covered, place them on top of other ravioli. Pour the remaining sauce over ravioli and around the edges to cover the ravioli. Add spices to taste. Sprinkle the shredded cheese and the parmesan cheese over the top. Cover with tin foil & bake for 25 minutes. Remove foil and bake for another 10 minutes. Serve with garlic bread and salad. Enjoy!
Additions: Add your favorite veggies (preferably sautéed) like spinach, green peppers, onions and mushrooms or diced cooked chicken or cubed tofu to this dish. Place them on top of the ravioli before adding the sauce and cheese.

Your recipe sounds great jzka! I also like to saute the veggies before putting them on the ravioli.

Spray baking dish with cooking spray, lay down the meat ravioli, put 12oz. fresh sliced mushrooms and 1 1/2 cups of frozen spinach on top of the ravioli, then cover with the jar of spaghetti sauce. Bake as above.
Less fat/calories/ww points with the added veggies and without the cheese. You can also saute the veggies in olive oil and garlic first for added texture/taste;)
