Monday meal plan 5/9

This week at Cafe' Prosser, we are enjoying grilled chicken breasts, grilled turkey sausage, veggie frittata, shrimp quesadilla and creamy tofu and mushrooms.

What's on your menu for the week?





Grilled boneless skinless chicken breasts (marinated in Wish-Bone Romano Parmesan dressing)
The chicken was on sale at Harris Teeter a couple weeks ago for $1.66/lb. They are on sale this week at Kroger through 5/14 for $1.97/lb, at Lowes Foods through 5/19 for $1.99/lb and the split chicken breast is on sale at Harris Teeter for .97/lb through 5/10.

Brown rice



Tomato, bread and cheese frittata
I found the recipe in this week’s Parade magazine but I am changing some ingredients to make it healthier and more frugal and to accommodate ingredients I have on hand. I am substituting the following:

Skim milk instead of the heavy cream in the recipe

No red peppers because they are ridiculously priced and instead I am using more green peppers and sliced mushrooms

Texas Toast seasoned croutons instead of day old bread because I have them on hand and we love the taste of croutons in egg casseroles

2% Kraft shredded cheese instead of ricotta because it is healthier and I have it on hand purchased frugally with sale and coupons

No butter or oil used – only fat free non-stick spray

Sides: Veggie bacon and fruit (NC strawberries on sale at Food Lion for $1.25/lb through 5/10)


Shrimp, spinach and cheese quesadillas (frozen shrimp BOGO at Food Lion through 5/10, tortillas and sour cream on sale at Lowes Foods with coupons through 5/10)

Spanish rice


Apple slices


I am working late so hubby is in charge of sandwich night!


Creamy tofu and mushrooms on egg noodles. This is the recipe I was going to try last week but we had a change of plans so it is on the menu for this week. I’ll post the recipe once I figure it out! :- )


Steamed carrots


Out to dinner probably with a Groupon, Twongo or Living Social coupon


Grilled Butterball smoked turkey sausages (bought months ago for a great deal with coupon)

Whole wheat buns

Sauteed mushrooms, green peppers and onions to go on the sausages (sauteed in non-fat non-stick spray)

Pasta salad with chopped tomatoes, onion, black olives, green pepper and a combo of light mayo and light ranch dressing

Fruit (probably cantaloupe or watermelon slices)

    steakhouse dressing, maybe some pasta salad and grilled veggies (chicken from Kroger's sale). Sunday, roasting turkey breast (from Kroger's sale this week)

    At Casa D' Keslings our menu is (I'm really excited that I somewhat know this and it's Tuesday!!).. Monday, leftovers from Sunday, pork loin roast (on sale from Kroger's) covered in seasonings and balsamic vinegar and canola oil (I trimmed every last bit of fat and then was afraid it would be dry), red potato salad (sale at Food Lion), green beans and corn with sea salt. Tuesday, Perdue garlic and white wine chicken (from HT sale) over rice-a-roni broccoli rice au-gratin and steamfresh broccoli and mac n' cheese, pineapple and strawberries for dessert, Wednesday, Ronzoni pasta with Ragu spaghetti sauce (from Kroger's) with turkey meatballs (buy one get one from HT, will use Ken's dressing romano/parmesean, also on sale from HT, B2G3) and garlic bread (whatever almost expired bread is at Walmart, Thursday, leftovers, Friday, egg something, fried eggs and toast or scrambled eggs with cheese...(maybe with some turkey bacon.. from Kroger's), Saturday grilled chicken marinated in the Ken's

    Don't know what the real golo is, weasleyes - sorry.

    J - definitely need the garlic on those noodles. I also ad Mrs Dash sometimes as well to really spice it up for hubby and me - kids like it with butter, garlic and parm or other shredded cheese. We often add fresh rosemary from the plant in the yard.

    So I did the grilling tonight while hubby mowed and it had been a while since I was in charge of the sacred responsibility. The chicken tasted great and I think I will step up to be grill master more often! :-)

    thanks, guys! i've added butter and a little salt and pepper before, but it didn't do much for me. garlic was probably what i was missing. :)

    We also like to have my version of pasta salad. Very easy. Make any kind of pasta, microwave frozen veggie mixture (I like the asparagus mixture from Walmart, when done mix together, top with Good Seasons salad dressing and let stand for 5 minutes. Then my family tops with Parm. cheese. Great easy side dish.

    Cabbage and noodles are good. Chop up cabbage. Heat small amount of oil in frying pan. When chopped fry cabbage with seasonings. We like garlic powder, season salt and paprika sprinkled on the cabbage. My sister-in-law adds chopped onions also. (never tried it with the onions myself. Fry until soft. Cook noodles in water. When done add to cabbage mixture and mix. Then serve as side dish. Grew up with this dish to stretch budget with a big family.

    haha Total my husband does have to have meat at every meal including breakfast! I found that he really likes cut up raw veggies dressed in sour cream, salt and pepper. Lettuce is optional. I vary it depending on what we have around. Tonight I'm doing cucumbers, tomatoes, radishes, and red fire lettuce.

    j3434, After we boil the noodles we saute in a little butter with parsley, then we add grated parmesan cheese before eating
