Monday meal plan 5/2

On the frugal, healthy and tasty menu this week we have broiled turkey and cheese subs, salmon burgers, creamy garlic tofu and mushrooms and more! I have also listed some of the breakfast and lunch foods we'll be enjoying this week.

Broiled turkey and cheese subs
Pasta salad with fresh veggies
Fruit – whatever I pick up today


I’m working late so hubby is in charge of feeding the kiddos.

Salmon burgers on buns - BOGO Trident salmon burgers at Lowes Foods through 5/3

Sweet potatoes



Creamy garlic tofu and mushrooms (using Philly Savory Garlic Cooking Cream free from HT super doubles through 5/3 with $1.50/1 coupon) – I am making up this tofu recipe so we’ll see how it goes. I am going to cook it on the skillet and serve it over brown rice. I will probably throw in some fresh spinach as well….yum!

Graduation party for my cousin who is graduating from UNC – Congratulations Ashleigh! Not sure what we are having for dinner but I don’t have to cook or wash dishes so it will be FABULOUS no matter what it is!

Sunday – Happy Mother’s Day to all the moms!

I prefer not to cook on Mother’s Day so hubby and kids are going to surprise me with dinner (I can’t wait to see what they come up with!).

Breakfast and lunch: Here are are some of the breakfast and lunch foods we'll be eating this week.

Healthy lunches this week include veggie burgers, turkey sandwiches, chicken salad, cottage cheese on bed of tomatoes and lettuce, egg salad (using only hard boiled egg whites - no yolks) on whole wheat bread

Healthy breakfasts this week include fat free yogurt with fresh fruit and a sprinkle of multi-grain cereal, veggie sausage links dipped in applesauce, multi-grain cereal with fresh fruit, blueberry pancakes and yogurt and fruit smoothies

    Last night I made the best chicken! I took 2 large chicken breasts, cut each into 3 pieces, pounded them. Then I brushed one side of each piece of chicken with BBQ sauce and coated in breadcrumbs. Then I rolled up each piece of chicken with a slice of turkey bacon and 1/2 oz low-fat cheese. I baked them for 30 minutes at 400. Heavenly BBQ chicken rollups without the fat! Only 4 points on WW for each rollup!

    I made your pierogie casserole tonight. It turned out okay, probably should have used a smaller pan to make it, but it tasted pretty good. I only tasted it, ate leftover salad from lunch for dinner. When they go on sale again I will be buying again and attempting this again!! Thanks for sharing the recipe.

    Oxy, I don't use TVP - rehydrating just seems so unappealing. If you make the leap, let me know what you think.

    At some point, I need to share with you some of my favorite veg*n recipes for meat analogs. They beat the everloving tar out of store bought meat analogs and they're honestly not that expensive to make yourself. Make yourself = tweak the seasonings to your particular liking.

    Homemade vegan "chicken kiev," my poor husband begs me to make it again.

    Do you ever cook with TVP? I have a bag, but haven't braved opening it yet.

    You'll have to let us know how that tofu recipe goes. I bought SO much tofu during Super Doubles! (0.19c a package; can't beat that!)
