On the menu this week we have baked salmon, spinach enchiladas, breakfast for dinner and more!

What are you eating this week?

 

Monday

I am working late so hubby’s in charge of spaghetti night with peas on the side

Tuesday

Steak (we didn’t have time to grill last weekend as planned so it’s on the menu tonight)

Baked sweet potatoes (bought from a local farmer last fall in 40 lb box)

Salad

Wednesday

Spinach enchiladas

Spanish rice

Orange slices

Thursday

Baked salmon (Beacon Light frozen salmon fillets BOGO at Lowes through 4/5)

Long grain and wild rice

Roasted asparagus ($1.49/lb at Kroger through Sat – a very good deal on asparagus)

Friday

I will be at the Southern Women’s Show until after dinner so hubby is in charge of coming up with something wonderful (or at least marginally nutritious and tasty)

Saturday

I will be at the Southern Women’s Show until late so hubby is in charge of dinner

Sunday

Breakfast for dinner

Eggs (using eggs from Lowes Foods that were $1.38 for an 18 count in my e-offers last weekend)

Pancakes

Fruit salad
