Monday meal plan 3/28

On the menu this week we have BBQ Crockpot chicken, steaks on the grill, sesame ginger tofu and veggies, spinach and cheese quesadillas and more! What's on your menu?



Stir fry sesame ginger tofu and vegetables (Nasoya tofu $2.19 at HT - $1.50/2 coupon doubled through 3/29 = .69!

Rice - free from somewhere - can't remember now! :-)

Kahiki vegetable egg rolls (on sale at HT super doubles through 3/29 BOGO - $1 coupon from penguin coupon display found in some grocery stores)


Spinach and cheese quesadillas

Fat free refried beans

Fruit (maybe the grapes from Food Lion this week)


Pizza night!

Sugar snap peas


Creamy pasta and shrimp with Ronzoni Garden Delight pasta (free from Food Lion weeks ago), shrimp (BOGO Food Lion), Philly cream cheese sauce (free at HT with $1.50 coupon doubled through 3/29)

Spinach salad


BBQ chicken breast in the Crockpot (chicken breast 2.5 lb frozen for $3.99 at HT with e-VIC special)

Pasta salad

Fruit (probably some orange slices)


Steaks on the grill (bought on sale a while ago and hiding in the freezer. It was a nice find as we clean out the extra freezer to move to the new house)

Baked sweet potatoes (or maybe sweet potato fries if I am feeling ambitious)



Not sure yet - maybe breakfast for dinner  - maybe a mushroom quiche - maybe a bowl of cereal ;-)

    Monday: BBQ chicken in crockpot, mashed potatoes (McCains at FL + c), strawberries (HT sale), mixed veg (frozen veg sale + c)
    Tuesday: Pepper Steak in crockpot (Stew beef from BOGO), noodles (free with coupon), strawberries from Mon, frozen veg
    Wed: Ravioli (BOGO from Lowe's), Spaghetti Sauce (Paul Newman from HT + C), Pillsbury breadsticks (HT sale + c), salad, melon (FL BOGO)
    Thurs: Soup (from freezer), grilled cheese sandwhiches (cheese slices from sales + c), melon or grapes(FL sales)
    Fri: Family night at church ($2 per person for dinner)
    Sat: Dinner at neighbors
    Sun: Everyone for themselves

    Oh...and I spent $72 at HT yesterday and saved $76! At Kroger I spent $22 and saved $17. This super doubles was not as lucrative as the last one to me, but I now have plenty of cereal for my cereal-loving boys!

    Faye - I had gotten a recipe one time for BBQ ribs and it called for lemon juice over the ribs. Something about the acidity of the lemon joice tenderizes the meat. The ribs came out really tender, so I started using it on my chicken, too! I add a little bit of water because I have had the meat stick to the bottom of the crockpot before. I don't add a lot, but just so it coats maybe 1/2 inch or so on the bottom of the crockpot. It does help keep the moisture in the meat.

    When you are looking for a recipe for something I post, you can always search in the search box at the top of the page. I have posted the BBQ chicken recipe many times so it should be easy to find. Here it is:

    Easy Crockpot BBQ Chicken Recipe

    You can use beef, chicken or pork in this delicious and easy barbecue recipe.


    1 and ½ to 2 pounds boneless, skinless chicken breast

    ½ bottle of your favorite barbecue sauce

    ½ onion, chopped

    ½ tsp. Garlic powder

    Salt and pepper to taste

    Put chicken breasts in slow cooker. Season with garlic, salt and pepper. Pour barbecue sauce over meat and add onion. Cover and cook on Low for 6-7 hours, until fully cooked and tender. Check at 6 hours to see if done. Serve whole or pull apart to make BBQ sandwiches. Serves 4. Delicious!

    stebo - I do the same thing as mrschizzy (although I have not added lemon juice or water before. may have to try that). It's so easy it's almost embarrassing! We also love it shredded on sandwiches.

    Not sure about Fayes recipe, but when I make BBQ chicken in the crockpot, I just throw the chicken in the crockpot (thawed or frozen) and I coat them with lemon juice and add my spices (pepper, garlic powder...whatever else sounds good) and then I smother them in BBQ sauce - I like Sweet Baby Rays Honey BBQ sauce. I usually add about 1/4-1/2 cup of water in the bottom of the crockpot to keep the chicken moist. I cook on low for about 6 hours. It is really yummy! I have used boneless/skinless chicken before and shredded it when it was done cooking and had BBQ chicken sandwiches!
