Monday meal plan 2/14

Happy Valentine's Day to everyone! On the menu this week we have steak, teriyaki tofu, chicken soft tacos, salmon and Mellow Mushroom pizza!


Monday – Happy Valentine’s Day!


Sweet potatoes

Spinach Salad

Cupcakes with cream cheese frosting and red sprinkles


Sandwiches and soup – I am working late teaching a class, so it’s a great night for an easy meal (choice of either grilled cheese or veggie burger)

Grapes (.97 at Lowes Foods through 2/15)


Teriyaki tofu (which we all love!) – Tofu on sale through 2/15 at Harris teeter for $2.00 - .75 printable doubled coupon from when you sign up for Tofu-U newsletter = .50 per container (an excellent price for tofu)

Sugar snap peas



Chicken soft tacos with lettuce, tomatoes, shredded cheese, salsa (.50 Chi-Chi’s at HT with coupon and sale this week and next), Wholly Guacamole (hopefully free with HT Super Doubles starting Wednesday 2/16). The kids love it when I set up a taco bar and they can go through and create their own tacos. do I. :-)

Mexican rice

Orange slices


Salmon fillets (they were on the menu last week but we had a change of plans and did not have them, so they are back on the menu this week)

Long grain and wild rice

Salad or steamed veggies – not sure yet


Pizza from Mellow Mushroom in Raleigh with a gift certificate we were given!

    Depends on what I have in the ole' pantry. In this case it is Lipton/Knorr sides that are on sale at HT for $1 - .50/2 coupon doubled = .50 each. Sometimes I make my own, sometimes I use Uncle Ben's. I have not made the Old El Paso before. Time to sear some steak. Be back later tonight. The sweet potatoes smell sooooo good!

    faye--do you buy the old el paso mexican rice in a box or make it yourself or use some other brand? i don't know how bad the OEP brand is in terms of sodium or anything else, but i say you can't beat it for taste. :) my kids love taco bars too!
