Monday meal plan 12-20

Here is my abbreviated meal plan for the week. We are eating at relatives a couple days and still up in the air for some of the meals so here is my mini meal plan. Looking forward to the homemade soup and crusty bread!

 

 

 

Monday

Salmon burgers (bought BOGO a few weeks ago)

Long grain and wild rice

Broccoli (Steamfresh on sale at Kroger for .88 through 12/25, $1 at Lowes Foods through 12/21 and BOGO at HT through 12/28, fresh broccoli crowns $1.48/lb at Lowes Foods through 12/21, fresh broccoli BOGO at HT through 12/21)

Tuesday

Homemade veggie soup

Crusty wheat bread

Tangerine slices (on sale just about everywhere for $1 or less per pound)

Wednesday

Baked penne pasta with marinara sauce, tofu, garlic, mozzarella cheese and sautéed mushrooms, onion and green pepper

Garlic bread

Salad

Thursday

Spinach quiche
Click in the link in the box above for a good recipe. I omit the crust for less fat. Tastes just as good.I also like to add sauteed mushrooms (which I like to add to just about any meal, actually....)

Fruit salad (apples on sale at Kroger for .99/lb, tangerines on sale everywhere, blueberries on sale at HT BOGO through 12/28

    Yum, jzka! Thanks for the quiche crust suggestion. Sounds great.

    For my spinach quiche - instead of a pie crust, I shred a thin layer of russet potatoes. It's soft when it's done, so to make it crustier, I've also browned them with a Tablespoon of Olive Oil in a non-stick pan first, then slid them into the pie pan.
