Here's the menu for this week with lots of familiar favorites and a new recipe - Shrimp Jambalaya. Enjoy!

Monday

Creamy crockpot mushroom chicken (I had planned to have this last week, but ended up not having it so I cooked it late last night in the crockpot. I cooled it, put it in the fridge and will heat it up for dinner. Boneless skinless chicken breast is on sale for $1.88/lb at Lowes Foods through 11/9 and split chicken breast is on sale at Kroger for .99/lb through 11/13.

Steamed carrots (Green Giant frozen on sale at HT this week for .60/box with sale and .60/3 coupon and fresh carrots are on sale at Lowes Foods for .99 for a 2 lb bag – good price! Both are one sale through Tuesday, 11/9)

Tuesday

I am teaching an evening class so it’s sandwich night with veggie chicken sandwiches, pasta salad with veggies and orange slices (oranges are $4.99 for an 8 lb bag at Kroger through 11/13)

Wednesday

BBQ beef sandwiches using London broil cooked in the crockpot (bought weeks ago for $1.99/lb on sale) with ½ bottle of BBQ sauce (bought with sale and coupon, of course!), ½ onion chopped, garlic powder and pepper to taste.

Baked cheese ravioli (Celentano frozen ravioli, 13 oz on sale BOGO for $1.44 at Harris Teeter through 11/9 – I bake 2 bags in a 9 x 13 inch glass baking dish), Ragu pasta sauce which was a great deal at HT last week with the Buy 2 Get 3 Free deal on the large bottles of sauce, 6 oz shredded cheese, green pepper .50 each at local roadside stand, ½ onion, garlic powder to taste)

Shrimp Jambalaya

I am trying out a new recepe - Shrimp Jambalaya. The shrimp was recently BOGO at Food Lion and I have had it in the freezer. I had this dish at a friend’s house last weekend and it was delicious. My friend directed me to Emeril’s recipe and I am going to make it Friday. As she did, I will be changing a few things (like adding smoked beef sausage instead of Andouille sausage), but the overall recipe will remain the same.
