Monday meal plan 10-25

After much discussion about the meal plan, I still have not decided whether I am going to switch days. For this week – we are still on a Monday schedule. Thanks to all of you for your input regarding what day of the week to publish the meal plan and what to call it if I switch to Thursdays. Enjoy!


Breakfast for dinner – we didn’t end up having the eggs and French toast on Sunday’s meal plan because we had the baked mushroom chicken (that was originally on Wednesdays schedule!). It was one of those weeks where we ate all the items I listed on the meal plan but many of the meals were eaten on different nights than planned. That is one of the great things about a meal plan – it is so flexible! So we are having a different version of breakfast for dinner tonight. Instead of French toast and eggs, I am making egg and Boca veggie chicken tortilla roll ups with sautéed mushrooms, onion and green peppers.

Boca chicken is on sale at Lowes Foods for $2.50 through 10/26 plus I used many of the $1 coupons you all sent me to stock up for $1.50 per box - thank you again for the coupons!!!

Eggs are on sale at Kroger for $1.29/18 count through 10/30

Julienne potatoes (free Betty Crocker potatoes during recent HT super doubles)

Orange slices - hurray for citrus season! ( navel oranges on sale at Lowes Foods for $1.97 for a 4 lb bag through 10-26 and Kroger for $4.99 for an 8 lb bag through 10/30)


Beef stew (beef stew meat on sale at Harris Teeter BOGO for $1.99/lb through 10/26)

Egg noodles (stocked up on No Yolks noodles when they were a great deal a couple months ago)

Steamed butter and parmesan carrots (carrots .77/lb at Lowes Foods through 10/26)

Crescent rolls (from HT super doubles last time)


Sandwich night – choice of sliced turkey, tuna salad, egg salad or veggie burger

Pasta salad (using .50 green peppers from local roadside stand)


Baked pierogies with pasta sauce, cheese, spinach and mushrooms

Broccoli (Green Giant frozen from Lowes Foods Fresh Rewards deal through 10/26)

Apple slices (great deals on apples at Walmart and Kroger through 10/30)

Clearly we like chicken with mushrooms and here’s another delicious recipe we love. The sauce is excellent on egg noodles. Bought my chicken breast on sale last week for $1.99/lb. The Campbell’s condensed soups are on sale just about everywhere and a great deal with the coupons found at the link above.

Saturday and Sunday – not sure yet. Between soccer games, bringing youngest to a birthday party and Halloween there will be some frozen pizza in there somewhere!

    Uzzle - that would take some time to figure. With sales tax and box tops due this week, it will have to wait til next weeks menu.

    I can tell you that my weekly budget is $70 per week which includes food, cleaning, paper products, bath and beauty and dog food for 2 adults, 2 kids (9 & 11) and 1 dog. With sales and coupons, I bring home more like $150 - $250 per week in product. Does that help?

    So I decided I was not in the mood for beef stew tonight. Instead, I am using the same stew meat and making teriyaki beef in the crockpot. I'll saute some veggies and serve it all on rice. This is another example of being able to change your mind without it costing any more money when you have a good overstock. I don't have to get anything from the store for the change of meal - it's all here!

    Picked up a recipe at the Fair for an easy quiche that uses sausage, shredded hash browns, cheddar cheese, and eggs. I have hash browns and cheese in the freezer from the sales and I got the eggs at Krogers. I use bacon in place of the sausage since I have a lot of bacon in the freezer from the buy 2 get 3 deals this summer. I was excited to get a recipe that I actually have the ingredients for in the kitchen
