Monday meal plan 10-4

Posted October 4, 2010

Tofu, BBQ chicken, quiche and quesadillas - that's what we are having this week. What's on your menu?

Update Monday, 10/5: The Baked Mushroom Chicken was fabulous! My husband said it was incredible and perfect for serving when company comes for dinner! Both girls loved it and one even asked for seconds. Success! I did make a couple modifications:

Used 16 oz mushrooms (I love mushrooms)

Used 2 lbs chicken

Used 1 cup of unsalted chicken stock so there would be more sauce, which tasted great on the noodles!

Added garlic powder (about 1/2 tsp) to the boiling mushrooms and onions in broth

Used cheddar and parmesan instead of mozzarella

Used 1/2 yellow onion sauteed with mushrooms instead of green onions at the end

I didn't pound the chicken. Instead, I cut the breasts in half longways before dredging in flour and browning.

I cooked the chicken for 20 minutes, then topped with the cheese and baked another 6 minutes.  Soooo good and there is leftovers for tomorrow's lunch!

We had the baked mushroom chicken for dinner tonight. Oh my! It was delicious, if I do say so myself. :-) I updated the meal plan above to include the modifications I made to the recipe. I highly recommend this recipe and we will be makign it again...very soon!
