Now that the fridge and freezer are working again (hurray!) I am back on track with the meal plan. It took a nosedive this weekend while we were living out of the cooler, but the fridge will be cool enough to use by about 6:00 pm tonight (Monday evening) so I will be shopping for fresh veggies on Tuesday.
So, what's on your menu this week?
Monday
Spinach and Feta Pierogie Casserole with cheese, frozen spinach and pasta sauce (Cheemo spinach and feta pierogies on sale BOGO at HT through 9/28 for $1.50 - $1 coupon from penguin coupon display in stores a few months ago) - recipe found below
Broccoli (frozen Green Giant from HT deal last week)
Tuesday
Tuna Salad on salad including tomatoes from our garden (they are also on sale at Kroger for .99/lb), cucumber on sale for .69 at Lowes Foods through 9/28, onion, black olives, green pepper
Croissants (from HT deal last week)
Apple slices (on sale .89/lb at Lowes Foods through 9/28)
Wednesday
Butterball turkey hot dogs – Free at Lowes Foods this week with sale and .75 coupon
Buns - .99 at Kroger through 10/2 (how can it be October already?!)
Pasta salad with veggies
Peaches .99/lb at Food Lion through 9/28
Thursday
Baked Mushroom Chicken from a Taste of Home.com recipe (see link to recipe in box above) – chicken breast was on sale a couple weeks ago for $1.79/lb and mushrooms are on sale at Aldi for .99 for an 8 oz (a very good price) through 9/28 and at Food Lion for $1.99 for an 8 oz through 9/28
Egg Noodles
Sugar snap peas
Friday
Slow cooker chicken chow mein with vegetables (I am using chicken breast of thighs)- link to recipe found in box above
Eggs rolls (Kahiki on sale BOGO at HT super doubles with $1 coupon)
Rice
Orange slices
Saturday
Not sure yet – maybe out to dinner (with a coupon, of course!)
Sunday
Breakfast for dinner! (we all love this meal)
Blueberry pancakes (using HT frozen blueberries on sale through 9/28)
Scrambled eggs (Eggs on sale at HT for .99/dozen through 9/28)
Morningstar or Boca Veggie sausage (whichever is on sale – hopefully Boca since I have so many coupons now thanks to you all!)
Fruit – waiting until Wednesday sales to decide on the fruit
Pierogie Casserole Recipe
This recipe is actually on the back of the Mrs. T's Pierogies box so I didn't come up with this one myself. I did change a couple things though. It’s a great weeknight recipe because it is so easy to put together, tastes great and is done in 35 minutes.
Ingredients
1 box frozen pierogies
1 jar pasta sauce
4 oz. shredded cheese
1 green pepper diced or 1 box frozen spinach, cooked and drained
1/2 vidalia onion diced
Garlic powder and Italian seasonings to taste
Put frozen pierogies on bottom of 9 x 13' pan. Sprinkle veggies on top of pierogies. Pour sauce on top. Sprinkle cheese evenly over sauce. Finally, spice to taste with garlic powder and Italian seasoning. Sometimes I add diced chicken, shredded beef or tofu cubes for extra protein. Bake at 350 degrees for 30-35 minutes uncovered until bubbling.
