Monday

Shrimp and pasta salad

Parmesan carrots

Crusty bread

Tuesday

Teriyaki chicken and veggies (green pepper, onion, mushrooms)

Rice

½ Cantaloupe (.98 per cantaloupe at Kroger through 9/4)

(boneless chicken breast is on sale this week for $1.99/lb at HT through 8/31 and BOGO at Food Lion through 8/31, split chicken breast is on sale at Kroger for .99/lb through 9/4)

Wednesday

Breakfast casserole (recipe below)

The other half of the Cantaloupe (.98 at Kroger through 9/4)

Thursday

Morningstar Farms Veggie chicken sandwiches (veggie chicken patties were on sale during super doubles, Boca veggie burgers are on sale at HT through 9/4 for $2.50/box)

Buns (on sale for .99 at Kroger through 9/4)

Corn (.33/ear at Kroger through 9/4)

Salad

Friday

Smoked Turkey and Avocado Wraps (recipe at link in box above)

The tortillas were free during Super Doubles, Hillshire Farm smoked turkey free at Walmart using gift card from redeeming credit card reward points (usually $3 for 8 oz container - .35 coupon = $2.65), avocado .68 each at Walmart through 9/4, carrots approx .88/lb at Walmart, tomatoes free from garden, not sure where I am getting the spinach and provolone yet – waiting for Wednesday sales. I don’t use alfalfa sprouts in the recipe and instead use fresh spinach)

Oven baked sweet potato fries seasoned with parmesan and a little salt (recipe in box above)

Saturday

Lemon herb salmon on the grill (frozen salmon fillets from Walmart approx. $4.50/lb)

Long grain and wild rice

Grilled squash

Watermelon (personal seedless on sale for $2 at Kroger through 9/4)

Sunday

Not sure yet – we’ll see what is on sale starting Wednesday


Breakfast Casserole

Ingredients

1 box or 2 bags of croutons, seasoned (I’ll be using 2 bags of Texas Toast Garlic and Butter Croutons)

1 green, red or yellow pepper, diced

2 cans mushrooms, sliced

½ onion, chopped

6 Morningstar veggie bacon strips, cooked and crumbled (6 strips cooked in microwave for 2 and ½ minutes) – of course you can also use real bacon, bacon bits or no bacon, if you prefer)

6 oz. shredded cheese (cheddar or cheddar/mozzarella mix work well – I’ll be using 2% cheddar)

12 eggs

3 cups milk (I used skim milk)

Garlic and pepper to taste

Place croutons on bottom of 9 x 13 inch pan. Put veggies over croutons. Spread crumbled bacon over veggies. Sprinkle approx 6 oz. cheese evenly over pan. In a large bowl, mix eggs, milk and spices together well. Pour into pan. Sprinkle remaining 2 oz. cheese over top of casserole. Bake at 350 degrees for 45-55 minutes. Let stand 5 minutes.
