It's another week of enjoying summer grilling including chicken, veggies in foil packets and veggie burgers! We are also swimming in tomatoes so we are eating them with every dinner (and most lunches), giving them away and freezing them for sauce to enjoy this winter.
Out to dinner for family event (with a coupon of course!)
I am working late so it’s sandwich night for hubby and the kids using Oscar Mayer deli sliced chicken bought during super doubles with e-vic special and $1 coupon doubled.

Squash casserole – both kids loved it when I made it last week so we are having it again with more squash from our garden. The recipe is below. I amended the recipe posted last week – here is the new one.
(Using $1.99/lb chicken breast from Lowes Foods on sale through 8/17. Tortillas were free during super doubles at HT through 8/17 with $1 Mission tortilla coupon. Cheese was free from Kroger during promo a couple weeks ago. Tomatoes free from garden. Guac free from Super Doubles. Sour Cream .30 for 16 oz. from HT a couple weeks ago on sale with coupon. Green pepper on sale at Kroger last week for .69 and on sale at Food Lion through 8/17 for .79. Onion on sale last week.

Total for meal: $5.25

Grilled veggie foil packets including squash, onions, mushrooms and peppers

Squash Casserole Recipe
1 tbsp olive oil for sautéing veggies or use non-stick cooking spray
2 lbs yellow squash chopped or sliced (whichever you prefer – I usually slice)
1 onion, chopped or sliced
1 cup low fat shredded cheddar cheese
2 eggs, beaten
1 cup milk (we use skim or 1 %)
1 cup seasoned croutons, crushed
2 tbsp melted butter
Garlic powder and pepper to taste
Preheat oven to 350 degrees. Saute squash and onions in skillet until tender, but not mushy. Place veggies in a 2 qt casserole. In a medium bowl, combine egg, cheese, milk and spices. Mix well and pour into the casserole dish with the squash. Bake for 25 minutes. While squash mixture is baking, melt butter and pour over crushed croutons. Mix well. Remove squash from oven and sprinkle buttered croutons on top of casserole. Bake an additional 10-15 more minutes. Serves 4.
