On the menu this week we have my favorite breakfast casserole recipe, my favorite broccoli slaw recipe and lots of tasty grilled meals. What's on yoru menu this week?
We didn’t end up having the salmon burgers last week, as planned, so they are on the menu this week.
Salmon burgers
Sandwich buns ($1 on sale at Kroger this week)
Long grain and wild rice
Salad (because you can really never have enough homegrown tomatoes and cucumbers!)
I’m working late so hubby is in charge of dinner
Grilled cheese
Pasta
Broccoli
Grilled chicken soft tacos (chicken breast on sale through 7/20 at Lowes Foods for $1.97/lb, tortillas on sale at Kroger for $1 per package)
Lettuce, tomatoes, shredded cheese (on sale .49 at Kroger with promo and coupon – free after Catalina deal), sour cream (was free at Lowes a few weeks ago with sale and coupon), salsa
Mexican rice
Baked flounder (frozen flounder fillets are a good price at Walmart every day, they are also on sale at Food Lion BOGO through 7/20)
Long grain and wild rice
Sauteed onions, zucchini and yellow squash from the garden
Grilled Light Hebrew National Hot Dogs (on sale BOGO at Lowes Foods through 7/20 - .75/1 coupon)
Hot dog buns (on sale at Food Lion for .99 through 7/20)
Broccoli slaw
Brownies
Boca veggie burgers on the grill (on sale last week with Kroger promo for $1.69/box)
Buns (on sale at Food Lion for .99 through 7/20)
Pasta salad with fresh veggies from the garden
Breakfast for dinner
Egg casserole with fresh veggies, veggie bacon, croutons and cheese
Fruit salad
Breakfast Casserole Recipe
1 box or 2 bags of croutons, seasoned (I used 2 bags of Texas Toast Garlic and Butter Croutons)
½ green, red or yellow pepper, diced
1 cup fresh spinach from the garden
2 cans mushrooms, sliced (these were on sale last week at Walgreens)
½ onion, chopped
6 Morningstar veggie bacon strips, cooked and crumbled (6 strips cooked in microwave for 2 and ½ minutes) – of course you can also use real bacon, bacon bits or no bacon, if you prefer)
8 oz. shredded cheese (cheddar or cheddar/mozzarella mix work well – I used 2% cheddar) – Free at Kroger this week with $5 off promo and Catalina deal
12 eggs (.88/dozen last week)
3 cups milk (I used skim milk)
Garlic and pepper to taste
Place croutons on bottom of 9 x 13 inch pan. Put veggies over croutons. Spread crumbled bacon over veggies. Sprinkle approx 6 oz. cheese evenly over pan. In a large bowl, mix eggs, milk and spices together well. Pour into pan. Sprinkle remaining 2 oz. cheese over top of casserole. Bake at 350 degrees for 45-55 minutes. Let stand 5 minutes.
