Monday meal plan 6-21

Posted June 21, 2010

Happy first day of summer! For the next eight weeks, while summer is here, the kids are out of school, and I am juggling full-time kids and full-time work from home, you will notice that the meals are lighter and simpler. They will include more veggies from the garden and involve less cooking in the oven. I try not to use the oven as much during the hot months to keep the house cooler. Instead, we use the grill and stove more often. Please feel free to share your favorite summer recipes!

Happy to share them, ccullen. I was a vegetarian for years in college and prefer less meat myself. If you have any favorite vegetarian recipes to share, please post them.

The quiche tonight was soooo good. Totally a keeper recipe! I did adjust the milk quantity. The recipe calls for 1 and 1/2 cups milk or cream. I only used 1 cup 2% milk, which was perfect. I used a 9" regular frozen pie crust and that extra 1/2 cup of milk would have been more than the crust could have held. The fresh spinach, swiss cheese and sauteed mushrooms were a delicious combination.

$2.50/lb is a very good price for blueberries, ang! Thanks for sharing! What's better is that they are LOCAL berries!
