Monday meal plan 4-19

On the menu this week we have Teriyaki Chicken, Creamy London Broil in the Crockpot and a delicious egg and veggie casserole.

This week I am using up some food from the freezer, taking advantage of the meat and chicken deals from Food Lion, and enjoying the produce deals from Kroger and HT.  Please share any frugal meals on your menu this week!

Monday
Lasagna
Peas (free Steamfresh veggies from a few weeks ago with sale and coupon)

Pear Slices (pears on sale at Harris Teeter for $1.29/lb through 4/20)

Tuesday
Teriyaki Chicken (chicken breast on sale for $1.549/lb at Food Lion through 4/20 – I’ll be using 1.75 lbs)
Brown Rice (free Steamfresh rice)
Egg Rolls (.50 for box of Kahiki egg rolls on sale at HT Super Doubles a couple months ago)
Steamed Carrots with light butter (.79/lb at Walmart)
Milk for kids to drink ($1.99/gallon last week at Harris Teeter)

Cost for meal for 4 people = Approx $4.40

Wednesday
Homemade spinach, garlic and black olive pizza (using Pillsbury pizza crust on sale for .40 with coupon a few weeks ago, Hunt’s pasta sauce on sale for .70 at Lowe’s Foods a couple weeks ago, fresh spinach and black olives on sale at Walgreens for .50 with coupon a couple weeks ago)

Broccoli crowns (on sale .99 at Kroger this week)

Thursday
Creamy Crockpot London Broil (on sale at Food Lion for $1.98/lb until 4/20 – a very good price)
No Yolks egg noodles (on sale at Lowe’s Foods for $1.79 through 4/20 - .75 coupon doubled = .29)

Salad

The link to the basic recipe I am using is in the gray box above. I do not add water when I make this. Instead, I use 1 and ½ cans Progresso Creamy Mushroom soup, which is not condensed. I also add ½ sliced onion and 4 oz sliced fresh mushrooms. Delicious served over egg noodles.

Friday

I’ll be at the Smart Shopper booth (adjacent to the main WRAL booth) at the Southern Women’s Show all day and evening – come by and say hi, get some chocolate and register to win a Lowe’s Foods Gift Card!

Hubby and the kids will be having the following for dinner:

Cheese Quesadillas (cheese bricks, 8 oz on sale BOGO at Lowe’s Foods through 4/20 for $1.05, tortillas are free from HT a few months ago with triples – they were stored in the freezer)
Mexican Rice

Grapes - on sale at Food Lion through 4/20

Saturday

I’ll be at the Smart Shopper booth at the Southern Women’s Show again so kids and hubby will be eating:

Grilled light beef hot dogs (on sale with coupon couple weeks ago)
Hot dog buns - .99 at Food Lion through 4/20
Pasta Salad

Apple Slices

Sunday

Egg and Veggie Breakfast Casserole
Bagels and cream cheese

Fruit

Breakfast Casserole Recipe
Ingredients
1 box or 2 bags of croutons, seasoned (I am using 2 bags of New York Texas Toast Garlic and Butter Croutons)
1 green pepper, diced (.98 each at Walmart last week)
1 can mushrooms, sliced
½ onion, diced
½ box Boca Sausage Links (vegetarian soy based links found in freezer section), cooked and sliced
(Cook 5 Boca links in microwave for 1 minute) – of course you can also use real sausage if you prefer or no sausage at all
4 oz. shredded cheese (Cheddar or 4 Cheese Mexican cheese work well)
9 eggs (on sale for $1.29 a dozen at Walgreen’s this week)
3 cups milk (I use skim milk or ½%)

Garlic, pepper and Italian spices to taste

Place croutons on bottom of 9 x 13 inch pan. Put veggies over croutons. Spread sausage over veggies. Sprinkle cheese evenly over pan. In a large bowl, mix eggs, milk and spices together well. Pour into pan. Bake at 350 degrees for 45-55 minutes until browned and set. Let stand 5 minutes.
