Here's a delicious and easy banana bread recipe I made last night - enjoy!
Posted — UpdatedI had some very ripe bananas I needed to use last night so I whipped up a loaf of this easy and delicious banana bread. I made a couple changes to increase the health benefits and the taste was still just as good. I replaced 1/2 the all purpose flour with whole wheat flour and I added less sugar. I think that next time I make this I will reduce the butter by 1/2 and add 2 tablespoons of applesauce (which I often do when baking).
We all enjoyed having a piece of the bread for breakfast topped with some light cream cheese.

3/4 cup of all-purpose flour
Preheat the oven to 350°F. Mash peeled bananas in large mixing bowl with fork. Melt butter in microwave for approx. 40 seconds. Mix melted butter into the mashed bananas. Mix in the sugar, egg, vanilla, baking soda and salt. Slowly mix in the flour. Pour mixture into a 5" X 9" loaf pan sprayed with cooking spray. Bake for 45 minutes. After baking for 45 minutes, cover pan loosely with tin foil to prevent top from burning. Bake an additional 15 minutes. Total cooking time is 1 hour. Cool for about 15 minutes. Enjoy!
