I am trying a couple new recipes this week and I have broken down the meal cost for 4 of the week's dinners. Enjoy!

I am trying a couple new recipes this week including baked tilapia with dill, corn and tomatoes that looks delicious!  This week I have also broken down the meal cost for 4 of the week's dinners and indicated the stores where I bought the deals. Enjoy!

Monday
Breakfast for Dinner Night!
Bagels and Cream Cheese
Scrambled Eggs
Apple Slices

Red Velvet Cake (ok - cake is not usually for breakfast.....usually)

Tuesday
Salmon Burgers
Whole Wheat Arnold Sandwich Thins
Asparagus

Uncle Ben’s Sun Dried Tomato Florentine Rice

Wednesday
Light Veggie Alfredo
Cuban Bread

Pineapple Slices

Thursday
Sandwich Night (choose between tuna or veggie burgers)
Arnold Whole Wheat Sandwich Thins
Broccoli

Brown Rice

Friday
New Recipe! Baked Dill Seasoned Tilapia with Corn and Tomatoes (see the link to the recipe in the box above)
Asparagus
Butter and Parmesan Noodles

Foil Baked Asian Chicken and Spinach (see link to the recipe in the box above)
Long Grain and Wild Rice

Not sure about veggie yet – depends on the sales that start Wednesday


Sunday

We’ll see what is on sale starting Wednesday. I may pull out a roast from the freezer since we had no red meat during the week. 


Cost Breakdown for Monday Meal:

Bagels – Thomas Bagels on sale BOGO at Lowe’s Foods through 2/16 for $2 - $1 coupon from March All You Magazine = $1 for 6 big soft honey wheat bagels (we will use 4 for dinner)

Cream Cheese – Phili Cream Cheesze tub on sale for .50 after coupons and promo a couple weeks ago at Kroger

Eggs – Egglands Best on sale at Lowe’s Foods through 2/16 for $2.00 - .35 coupon doubled = $1.30 for 12 (we will use 8 eggs for dinner)

Apple Slices – 3 lb bag on sale at Lowe’s Foods last week for $1.29 using e-offers deal We will use about 3 apples with dinner)

Milk for kids to drink – Free at CVS using CVS gift card (from cashing in credit card reward points for gift card)

Red Velvet Cake – leftover from Valentine's dinner Sunday night – approx. .75 for 4 pieces

Total approx. cost of dinner for 4 people: $3.21 (.80 per person)


Cost Breakdown for Tuesday Meal:

Salmon Burgers – on sale at Lowe’s Foods a few weeks ago for $3.24 for 4 burgers

Whole Wheat Arnold Sandwich Thins – on sale at Lowe’s Foods through 2/16 for $2.50 - .55 coupon I found on a tear pad at my gym = $1.40

Asparagus - on sale for $1.49/lb at Lowe’s Foods through 2/16

Uncle Ben’s Sun Dried Tomato Florentine Rice – Free with sale and coupon a few months ago

Milk for kids to drink – free with CVS gift card

Total cost for 4 people: $6.13 ($1.53 per person)


Cost Breakdown for Thursday Meal:

Sandwich Night (choose between tuna or veggie burgers) – Starkist Tuna was .14 per pouch during last triples at HT with sale and coupon. Morningstar Veggie burgers were .37 each with sale and coupon at Lowe’s a couple weeks ago.

Arnold Whole Wheat Sandwich Thins - $1.40 for 6 buns

Broccoli – Free Steamfresh

Brown Rice – Free Steamfresh

Milk – Free with CVS gift card

Total approx. cost for 4 people: $3.15 (.78 per person)


Cost Breakdown for Friday Meal:

New Recipe! Baked Dill Seasoned Tilapia with Corn and Tomatoes:

Frozen Beacon Light Tilapia on sale at Lowe’s Foods BOGO through 2/16 for $3.00 for 12 oz package. I am making 2 packages because my dad is coming for dinner. We can use the leftovers for lunch the next day = $5 for tilapia for dinner. Corn is free Steamfresh from a few weeks ago at both HT and Lowe’s. Tomatoes are free Rotel from Kroger a couple weeks ago (instead of the Hunts tomatoes indicated in the recipe).

Asparagus (clearly we love asparagus and when it is on sale for such a great price – we eat it a lot!) - $1.49 on sale at Lowe’s Foods though 2/16

Butter and Parmesan Noodles – Free No Yolks Noodles with a coupon and sale a few weeks ago (at Lowe’s Foods). Parmesan for 1/3 bag = .50. Light butter = .30

Cookie Bar Brownies – Betty Crocker mix on sale a couple weeks ago for $1.25. 2 eggs and oil = .30

Diet Coke and Milk to drink – Free using CVS gift card

Total approx cost for 5 people: $8.84 ($1.76 per person)

Total approx. cost for the 4 meals listed = $21.33 (which is $5.33 per meal)
Frugal, healthy and stress-free meals - what more could a busy mom ask for?!
