If you happen to be dining at the House of Prosser this week, you'll find homemade vegetable soup, chicken soft tacos, baked salmon, Italian chicken and more on the menu. What will you be having at your house this week...or even just tonight?
Monday
Chicken soft tacos (the chicken is in the slow cooker right now cooking with some light Italian dressing and smells divine!) with chicken, spinach, tomatoes, cheese, black olives, light sour cream and salsa (HT tortillas are BOGO through 10/2 and chicken was bought on sale in 2.5 lb bag a couple weeks ago. I am cooking the whole bag and then using ½ for Monday’s meal and ½ for Wednesday’s meal.)
** Update: I just took the Italian chicken out of the slow cooker and it is so delicious! I posted the picture of it above. This is the easiest recipe ever!
Place 2 - 2.5 lbs of chicken breast in slow cooker. Sprinkle pepper and garlic powder on to taste (we like a lot). Pour enough light Italian dressing (I used Wishbone Lite Italian Dressing) to cover top of chicken (about 1/3 of bottle). Cook on low for 5.5 hours. Check at 5.5 hours to make sure it is done. Enjoy! I’ll take a vote tonight to see if the family wants breakfast casserole, egg and cheese croissants, or egg and cheese biscuits for dinner Tuesday night

Fruit salad (lots of fresh fruit on sale just about everywhere this week!) – I’ll be using oranges, grapes, pears and apples from Harris Teeter
Wednesday
Leftover slow cooker Italian chicken from Monday night
Pasta salad
Steamed carrots
Thursday
Baked salmon
Salad
Wheat rolls
Friday
Homemade vegetable soup (using .99/lb zucchini and squash from Kroger this week, among other veggies)
Grilled cheese sandwiches
Tomato and cucumber salad (both on sale at Food Lion through 10/2)

Nakabi - I had to look up beef rendang because I had never heard of it. Although the prep sounds very time consuming, the result sounds delicious! Enjoy!
Kathy - do you have one of those turning rods for your grill to make the rotisserie chicken?
