Monday meal plan: chicken tacos, vegetable soup & more!

If you happen to be dining at the House of Prosser this week, you'll find homemade vegetable soup, chicken soft tacos, baked salmon, Italian chicken and more on the menu. What will you be having at your house this week...or even just tonight?

Monday

Chicken soft tacos (the chicken is in the slow cooker right now cooking with some light Italian dressing and smells divine!) with chicken, spinach, tomatoes, cheese, black olives, light sour cream and salsa (HT tortillas are BOGO through 10/2 and chicken was bought on sale in 2.5 lb bag a couple weeks ago. I am cooking the whole bag and then using ½ for Monday’s meal and ½ for Wednesday’s meal.)

** Update: I just took the Italian chicken out of the slow cooker and it is so delicious! I posted the picture of it above. This is the easiest recipe ever!

Place 2 - 2.5 lbs of chicken breast in slow cooker. Sprinkle pepper and garlic powder on to taste (we like a lot). Pour enough light Italian dressing (I used Wishbone Lite Italian Dressing) to cover top of chicken (about 1/3 of bottle).  Cook on low for 5.5 hours. Check at 5.5 hours to make sure it is done. Enjoy!   I added this recipe to the WRAL recipe database under Slow Cooker Italian Chicken.

Something with eggs – they are on sale for .99/dozen at Harris Teeter this week

I’ll take a vote tonight to see if the family wants breakfast casserole, egg and cheese croissants, or egg and cheese biscuits for dinner Tuesday night

Fruit salad (lots of fresh fruit on sale just about everywhere this week!) – I’ll be using oranges, grapes, pears and apples from Harris Teeter


Wednesday

Leftover slow cooker Italian chicken from Monday night

Pasta salad

Steamed carrots


Thursday

Baked salmon

Salad

Wheat rolls


Friday

Homemade vegetable soup (using .99/lb zucchini and squash from Kroger this week, among other veggies)

Grilled cheese sandwiches

Tomato and cucumber salad (both on sale at Food Lion through 10/2)

    I just put 2 loaves of banana bread in the oven using ripe bananas that were marked down to .29/lb at Lowes Foods 2 days ago. Here's the very easy recipe:

    UNCW Ash and Erika - great job on your meal plans! Even with a busy schedule, you will probably find that it's less stressful to offer good, frugal meals when you do some planning ahead. Keep in mind that a meal plan is not set in stone. Things happen during the week that causes me to switch the meals around on our plan all the time.

    Nakabi - I had to look up beef rendang because I had never heard of it. Although the prep sounds very time consuming, the result sounds delicious! Enjoy!

    Kathy - do you have one of those turning rods for your grill to make the rotisserie chicken?

    M- Rotisserie Chicken done on gas grill, pasta salad(mixed veggies, pasta, salad dressing & parm cheese) T- Leftovers W - Spiral Ham (been in freezer when it was on sale last spring), mashed potatoes, green beans, salad - Th. and/or Friday - Ham, egg, veggie omelet ($.99 eggs from HT, cheese b2g3)(got 2 zucchini and peppers on clearance at HT today & froze mushrooms from sale last week), fried potatoes/leftovers

    I only have a couple of meals planned so far. Chicken barley vegetable soup made mostly from bits of leftovers, and homemade eggplant parmesan which is one of my faves and easy too. I usually make a big pot of spaghetti sauce with roasted Italian sausage when I make eggplant, so my DW can have spaghetti & sausage (hates eggplant). I picked up 3 of those HT sale chickens for the freezer to cook whole, but I'm thing about getting some more tomorrow to break down into parts for the freezer as well.

    I don't usually plan the week's meals ahead of time, but I thought I'd try it this week. Most meals I cook enough for 2 nights since my husband and I don't mind leftovers.
    M/T - Homemade pizza using pizza dough and B2G3F cheese from HT, W - Garlic/ Lime Shrimp (Frozen shrimp B2G3F at HT a while back), Th/F - Turkey Breast roasted in the crockpot, with garlic mashed potatoes (Potatoes from Lowes Fresh Reward this week and Turkey from Target when it was $0.99/lb a while back), Sat-Probably cook something using leftover turkey Sun-Family Birthday Party

    Okay, first time posting our menu...we usually fly by the seat of our pants. We have football M,T and Th and aren't home till 8:30 so it makes cooking and eating together hard but this week we're making a bigger effort: M: meatball subs (using HT meatballs, Ragu from sale a while back, sub rolls from LF BOGO this week), T:Hamburger helper (not the best but my kids love it) with field peas and snaps, W: left over meatball subs (church night so needs to be quick), Th: Egg Sandwiches w/ HT eggs and fruit, F: date night for my birthday, S: wedding, Sun: having our middle school small group over - 2 whole chickens in crock pot (.69/lb at HT this week) with red potatoes (1.59 a bag at LF) and various veggies plus biscuits. Yum! We are really trying to cut down on our eating out budget this month. Hope it works!

    Good luck on getting the rest of your stuff unpacked, Erin! It sounds like you are eating pretty frugally and not going out to eat every night, at least. Nicely done!
